Dude! This Crock Pot Cheesy Chicken Sweet Corn Casserole is delicious! Like seriously, it is “scroll down to the ingredient list, write up a list and go get groceries so you can make this ASAP” good.
It has been a long time since I have been to Guatemala. Very rarely does something remind me of the amazing food we ate while working down there. You see, there was a local woman who lived in one of the mountain villages near where we were working that was hired by the mission to make our meals for lunch each day. It was some of the best food you could ask for. Her name is Connie (said cone-NEE). I do believe Connie would approve of this recipe and probably serve it up with some of her amazing homemade black beans. Yum!

What You Will Need
Ingredients Needed
- 2 lb boneless, skinless chicken, cubed and cooked
- 1 green bell pepper chopped
- 1 sweet onion chopped
- 10 oz diced tomatoes with green chilies, drained
- 8 oz Mexican Velveeta, diced (If you can’t find Mexican Velveeta, plain Velveeta will work as well.)
- 15.5 oz creamed corn
- 15 oz Mexicorn, drained
- 15 oz corn, drained
- 3 cups minute rice uncooked (plus water to prepare)
- salt and pepper to taste
- 2 cups shredded cheddar cheese
Equipment Needed
- Sharp knife
- Cutting board
- Measuring cup
- Skillet
- Wooden spoon or heat safe spoon
- 6 quart slow cooker or casserole crock pot
Time Needed
- Prep Time: 20 minutes
- Cooking Time: 2 to 3 hours on low

Crock Pot Cheesy Chicken Sweet Corn Casserole
Ingredients
- 2 lbs boneless skinless chicken cubed and cooked
- 1 green bell pepper chopped
- 1 sweet onion chopped
- 10 oz diced tomatoes with green chilies (mild), drained
- 8 oz Mexican Velveeta diced
- 15.5 oz creamed corn
- 15 oz Mexicorn drained
- 15 oz corn drained
- 3 cups minute rice uncooked (plus water to prepare)
- salt and pepper to taste
- 2 cups shredded cheddar cheese
Instructions
- Prepare rice according to package and set aside.
- In a skillet or browning slow cooker, cook your chicken, drain and return to the skillet.
- Add the green bell pepper and onion to the skillet and cook for 2-3 minutes.
- Stir in the tomatoes and Velveeta until cheese melts.
- In a large bowl combine skillet contents with rice, cream style corn, corn, Mexicorn, salt and pepper and mix well.
- Spray a 6-quart slow cooker (or Casserole Crock) with non-stick cooking spray or use a slow cooker liner (We use this reusable one).
- Add mixture to slow cooker and top with shredded cheese.
- Cook on low for 2 to 3 hours until cheese melts and edges brown slightly.
