How to Make King Ranch Chicken Casserole in a Crock Pot

As our readers from the South here in the US know, King Ranch Chicken Casserole is a long time favorite. However, there may be some of you that were like me and had never heard of it. When Cris told me to figure out how to make a Crock Pot King Ranch Chicken Casserole recipe, I had to look it up. I had never heard of it before! I am so glad she told me to make this! It is divine! I totally get why it is a long time favorite in the South!
Now, if you have been making this in the oven for a while, you may be asking why I didn’t saute the onions and peppers before hand. I wanted to make this recipe as easy as possible. While there are a ton of ingredients and quite a few steps, this recipe is not hard. If you are new to cooking, just take it one step at a time, you can do this! And the result will make you feel like an award winning cook!
What You Will Need
Ingredients Needed
- 1 red pepper, chopped
- 10.5 oz can of cream of chicken
- 1 green pepper, chopped
- 10.5 oz can of cream of mushroom
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 10 oz can diced tomatoes with green chiles
- 4 cups cooked chicken (I used a rotisserie chicken to get my 4 cups of chicken. You can do the same or buy raw chicken and cook it yourself. Whatever floats your boat.)
- 1/2 teaspoon ground cumin
- 2 tablespoons sour cream
- 1 teaspoon chili powder
- salt and pepper to taste
- 12 corn tortillas, divided
- 2 cups shredded cheddar, divided
Equipment Needed
- Sharp knife
- Cutting board
- Measuring spoons
- Measuring cups
- Large bowl
- Wooden spoon
- 6 quart Crock Pot or Casserole Crock Pot
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 4-6 hours on low or 2-3 hours on high

Crock Pot King Ranch Chicken Casserole
Ingredients
- 4 cups shredded cooked chicken
- 1 red pepper chopped
- 1 green pepper chopped
- 1 small yellow onion chopped
- 2 cloves garlic minced
- 10.5 oz can cream of chicken soup
- 10.5 oz Can Cream of Mushroom Soup
- 10 oz can diced tomatoes with green chiles undrained
- 1/2 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 tablespoons sour cream
- Salt and Pepper to taste
- 2 cups Shredded Cheddar Cheese divided
- 12 corn tortillas divided
Instructions
- In a large bowl, mix together your peppers, onion, garlic, seasonings, sour cream, soups and tomatoes with chiles until well combined
- Place 6 corn tortilla shells in the bottom of a greased 6 quart slow cooker or casserole crock pot (overlapping as necessary)
- Spread half of your mixture from step 1 over your your tortillas
- Top with half of your chicken
- Sprinkle half of your cheese evenly over top
- Repeat layers once more
- Cover and cook on low for 4-6 hours or high for 2-3 hours, turning your insert halfway through cooking if your slow cooker does not cook evenly

Easy, not too spicy or too mushy for picky kid, Fed 3 adults as dinner with 1 serving left over with no sides/breads. Used a rotisserie chicken from grocery to speed up prep a little.
