One of the best parts of summer are all the fresh veggies that are available! Whether you have your own garden, have neighbors who share or hit up your local fruit and veggie stand or farmer’s market, this Crock Pot Garden Vegetable Soup is going to knock your socks off! It is SO yummy!
To be perfectly honest, I can’t take credit for creating this delicious soup recipe. It is another recipe courtesy of Momma. She has some awesome neighbors who have given her some wonderful vegetables from their gardens. She came up with this amazing flavor combination she was truly inspired! I know you will love it as much as we do!
This is also a great recipe to let cook low and slow all day long while you are at work or out and about. No need to worry about making dinner when you get home after a long day! Just take the lid off the crock pot and ladle it up into bowls! Did I mention it is delicious?

What You Will Need
Ingredients Needed
- 2 small yellow squash, sliced
- 1 med zucchini, cut into chunks
- 1/4 med size head of cabbage, sliced
- 10.75 oz can french onion soup
- 15 oz can diced tomatoes
- 32 oz can tomatoes juice
- 1 oz pkg brown gravy
- 1 oz pkg ranch dressing
- 2 lbs hamburger, browned and drained
Equipment Needed
- Sharp knife
- Cutting board
- Skillet
- Colander or on pot strainer (I love my on pot strainer)
- 6 quart slow cooker
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 8-10 hours on low or 4-5 hours on high

Crock Pot Garden Vegetable Soup
Ingredients
- 2 small yellow squash sliced
- 1 medium zucchini cut into chunks
- 1/4 medium head of cabbage sliced
- 10.75 oz can french onion soup
- 15 oz can diced tomatoes undrained
- 32 oz tomato juice
- 1 oz brown gravy mix packet
- 1 oz ranch dip mix
- 2 lbs ground beef browned and drained
Instructions
- Place your squash and zucchini pieces in the bottom of a 6 quart slow cooker
- Top with your brown gravy and ranch dip mixes
- Add in remaining ingredients and stir until well combined
- Cover and cook on low for 8-10 hours or high for 4-5 hours, it is done when your veggies reach desired tenderness
