This low carb soup is a big time family favorite around here. I have made this several times on the road and when we are home. In fact, just yesterday I heard them fighting over the last of the leftovers! Guess it is time to make another pot. Thankfully, it is easy to put together and full of flavor.

One of the stars of this soup are the radishes. They are a great substitution for potatoes in this soup texture-wise and take on the flavor of the soup.

Notes on Crock Pot Beefy Vegetable Soup (Low Carb)

  • Put all ingredients except for the garnish in a 6-8 quart slow cooker and stir well.
  • Cook on high for 4-5 hours, low for 6-8 or until veggies are tender.
