How to Make Low Carb Beef Stew in a Crock Pot

As a slow cooker enthusiast, I love me good beef stew recipe. So, as my family has been transitioning to low carb family recipes, I thought I’d give beef stew a try with a couple tweaks to lower the carb count. It is so yummy and now my go-to Slow Cooker Beef Stew low carb recipe. I even made it for a recent camping trip and everyone including our self-proclaimed carb lovers loved it!
Ingredients Needed for Slow Cooker Beef Stew (Low Carb)
- 2 lbs stew meat
- 1/2 small yellow onion- chopped
- 2 Tablespoons bacon grease or melted butter
- 1 small head of cabbage – chopped
- 16 oz cauliflower florets
- 12 oz frozen chopped green beans
- 1 large zucchini- chopped
- 3 cups chunky marinara sauce (we use this low carb sauce)
- 4 cups beef broth
- Salt and Pepper to Taste
Slow Cooker Beef Stew (Low Carb) Notes
- I used my 7 Quart Cuisinart Multi-Cooker to do both the browning step AND the slow cooking, however you can brown your meat in a skillet and transfer to a traditional 6-8 quart slow cooker if you do not have a multi-cooker.
- We love the flavor of this low carb sauce, however it is expensive. If you are not eating low carb, feel free to use your favorite marinara sauce.

Slow Cooker Beef Stew (Low Carb)
Ingredients
- 2 lbs stew meat
- 1/2 small yellow onion chopped
- 2 Tablespoons bacon grease or melted butter
- 1 small head of cabbage chopped
- 16 oz cauliflower florets
- 12 oz frozen chopped green beans
- 1 large zucchini chopped
- 3 cups chunky marinara sauce we use this low carb sauce
- 4 cups beef broth
- Salt and Pepper to Taste
Instructions
- In a large skillet or browning slow cooker, brown meat and saute onions in bacon grease or butter until onions are tender and meat has browned a little.
- Combine all ingredients into a 6-8 quart slow cooker, stirring to combine well.
- Cook on low for 8-10 hours, stir and serve.

Doesn’t the zucchini get mushy cooking it for 8-10 hours? What is the texture of the cabbage after this long cooking time?

The cabbage was tender and great. The zucchini was soft but if that texture concerns you, just wait to add the zucchini during the last hour or two for a firmer texture.
