I love how easy this Crock Pot Meatball Vegetable Soup recipe I adapted from Gooseberry Patch’s 303 ‘Round the Clock Recipes. The prep is super simple, the taste is delicious and it can cook all day. It is the perfect combo for a crazy busy day!

How to Make Meatball Vegetable Soup in a Crock Pot

Put your meatballs in your 6-quart crock pot. Add in the rest of your ingredients. Cover and cook on low for 8-10 hours or high for 4-6 hours.

Ingredients

  • 2 lbs frozen Italian meatballs thawed
  • 1 cup celery chopped
  • 1/2 cup onion chopped
  • 1 cup potatoes peeled and diced
  • 1 cup baby carrots sliced
  • water enough to cover your ingredients
  • beef bouillon cubes one per cup of water

Instructions

  • Put your meatballs in your 6-quart crock pot.
  • Add in the rest of your ingredients.

      Hi Kim!

      I haven’t tried this recipe with parsnips, but think that they would work. This recipe has onions, carrots and potatoes. What other veggies would you like to add?

    This sounds great, but I rather make my own meatballs, so they are smaller. If I make them half the size of frozen would I cock at the same size.

    Do you have a specific frozen meatball brand you recommend? I would love to have a good brand recommendation.

      Hi Gay Lynn!

      I usually use the generic brand from Ruler (which is a Kroger company) or Wal-Mart’s generic brand. I’m always looking for a deal! 😉 I hope that helps!
