I am so excited to share this low carb soup with you! This keto-friendly recipe is an adaptation of the Low Carb Crock Pot Philly Cheese Steak Casserole we shared a while back that everyone loves! When altering it to cook up in our Instant Pot or Ninja Foodi it ends up being more of a delicious soup than a casserole. We love the beefy flavor of this soup with the cheesy topping! This would be a perfect soup to serve up to family and friends regardless if they are eating low carb or not!

Instructions

  • Place broth, beef, fat, peppers, onions, mushrooms, garlic, seasonings worcestershire and salt and pepper in a 6-8 quart electric pressure cooker.
  • Cook under high pressure for 30 minutes and then quick release.
  • Stir in cream cheese, mayo and cheddar cheese until melted and blended.
  • Serve in bowls and top with provolone.

    How much is a serving? In cups or oz

      We just divide soup into portions, so I do not know the exact measurements.

  2. I followed this recipe to a t, and Iโ€™m not sure what I did wrong, but my soup came out totally bland and watery, not thick and delicious mike the image in the recipe looked. I used two lbs of flap steak chopped up into small cubes but the rest was done exactly as listed.

    My rendition unfortunately came out a watery tasteless mess and Iโ€™m not sure where I went wrong.

      Oh no, Sarah! I hate to hear that it didn’t turn out for you. I am not sure what could have went wrong for you. Between the broth, seasonings and cheeses it definitely does not turn out tasteless for us. However, we totally understand that not every recipe is everyone’s cup of tea.   4. Does the beef need to be cooked already before putting in instapot or does it cook in the instaport? Sorry–new to the instapot!

      Unless a recipe says that it needs to be cooked ahead of time it is safe to assume the ingredients go in uncooked. The beef in this recipe cooks in the instant pot under pressure. Enjoy!! And, welcome to the world of electric pressure cooking!! I think you will love it!

    What cut of beef did you use for this recipe? Looks wonderful. Always looking for recipes to feed 10-15 folks. We travel in RV & do pot lucks. This looks like it will do nicely! Thanks!

      My favorite cut is the beef labeled “stir fry” beef at my grocery store. I like how they slice it thinly into strips. But if I can’t find it, in a pinch I will use stew beef. Hope that helps!
