How to Make Philly Cheesesteak Stuffed Peppers in a Slow Cooker

We recently tried out our low carbย Crock Pot Philly Cheese Steak Meatloaf mix as a stuffed pepper and my daughter was over the moon! This is one of her favorite dishes. Now, true Philly Cheesesteak lovers need to know that this dish is inspired by the sandwich flavor– not a pepper filled with traditional cheesesteak. Although, come to think of it, that is a lovely idea too!

Low Carb Stuffed Peppers Made Easy

This recipe is super easy. The most difficult part is cutting the peppers and scooping out the seeds. You will want to cut the peppers in half (see video), cut out the stem from the tops and flip both the bottoms and tops with the the large openings facing up in ourย Casserole Crockย (or 6 quart slow cooker).

  • We are using our Crock Pot Philly Cheese Steak Meatloaf mix as the filling for these Stuffed Peppers. If you would like to make a half batch of the peppers, you could turn the other half of the filling into a small low carb meatloaf.
  • We used ourย Casserole Crock Potย for this recipe but you can use a 6 quart slow cooker, it just may be a bit snug.
  • We like to useย meat thermometers like this oneย so we can leave it in while cooking to ensure the ground beef cooks to 165.
  • When choosing your peppers, choose tall skinny peppers to make fitting them in the slow cooker easier.

Crock Pot Philly Cheesesteak Stuffed Peppers (Low Carb)

Our Crock Pot Philly Cheesesteak Stuffed Peppers are a low carb twist on traditional stuffed peppers and our Crock Pot Philly Cheese Steak Meatloaf. This easy low carb crock pot recipe is one of my daughter's favorites!

Ingredients

Instructions

  • Cut bell peppers in half to create tops and bottoms, carefully removing stems and seeds.
  • Place all peppers with widest opening facing up in a casserole crock or 6 quart slow cooker.
  • In a bowl mix together remaining ingredients except provolone until blended well.
  • Fill each pepper half-way with meat mixture and press a slice of cheese down on each pepper. 
  • Top with remaining half of meat mixture, pressing down into each pepper.
  • Cook on High for 4-6 Hours or Low for 6-7 Hours or until meat mixture reads at least 165 on a meat thermometer.
  • Top with remaining cheese and place lid on slow cooker until cheese melts.
  • To serve carefully lift each pepper out of crock with a slotted spatula and plate.

  1. Did you add any liquid before turning on the crockpot or did the liquid you see when they are done come from the peppers themselves?

    I love cooking in the crock pot, for I never burn it, but this recipe looks great, and will try it
