How to Make Low Carb Meatloaf in a Slow Cooker

As long time readers may already know, I am a sucker for a Philly Cheese Steak. When I was pregnant with Miss Add many, many years ago, I was absolutely obsessed with a good Philly Cheese Steak Sandwich. I just love the flavors of the green peppers with mushrooms and onions and that glorious provolone cheese! Here at Recipes That Crock we have made a couple different Philly Cheese Steak inspired recipes:

So when I was flipping through Keto Comfort Foods  and saw a recipe for Philly Cheese Steak Cupcakes, I began thinking about how I could adapt our Low Carb Meatloaf Parmesan to a Low Carb Crock Pot Philly Cheese Steak Meatloaf. So, after a few tests, this delicious low carb meatloaf was born! Everyone in my family LOVES this dish! Leftovers are fought over. It is definitely a keeper.

We love making this recipe in our Ninja Slow Cooker so we can saute the veggies in the same pot before slow cooking. So, I start with butter, mushrooms and peppers and saute them until tender. Then I mix together the remaining ingredients (except the mozzarella slices) and divide it in half. Press half of the meatloaf down into the slow cooker and then layer half the slices of cheese on top. Then add the remaining meat and cook on high for 2-3 hours. Once the meatloaf is cooked through, add remaining cheese on top and melt before slicing up to enjoy!

  • We like to use our Ninja Slow Cooker to make this dish a one pot prep. However, you can use a traditional slow cooker if you choose to do the saute step in a skillet instead of the unit.
  • This is a VERY cheesy recipe. If you would like less cheese, skip the cheese layer in the middle.

Ingredients

Instructions

  • Heat the butter in a sauce pan and season mushrooms and peppers with salt and pepper  and saute until tender.
  • Meanwhile in a bowl combine beef, eggs, parm, Italian seasoning, onion and garlic until mixed well, seasoning with additional salt and pepper.
  • Add peppers and mushroom to meat mixture and combine well.
  • Press half of the meat mixture into the bottom of a 6 quart slow cooker.
  • Top with half of the cheese slices and then press the remaining meat mixture on top of the cheese.
  • Cook on high for 2-3 hours or until cooked through and then top with remaining cheese slices and cook until melted.

    This sounds delicious! Can’t wait to try it. I only have one question, I don’t see any crackers or breadcrumbs listed. Does it not get runny or greasy without them? I’ve just never made any type of meatloaf without some sort of something to soak up any juice to help keep it glued together. But with or without, I am making this , this weekend!

      Hey Brandie!
      The original recipe is low carb, so we skipped the breadcrumbs. It has been a while since I have made this, but if I recall, the parm helps hold it together. The leanness of your ground beef will determine the amount of grease that will cook down. If you prefer the texture of a meatloaf that has bread crumbs and do not need the recipe to be low carb, I’d just add some in. It won’t likely impact cooking time. Hope that helps!
