Everyone should have access to this soup, no matter how many servings you need, so I converted our favorite Crock Pot Cheesy Potato Soup into a recipe for two. When I made this recipe with only two servings, there was a bit of an uproar in my house. You see, we have two adults and two kids. We had a business evening of practices and running. We got home and there were only two servings available of this soup, and everyone wanted them. (All of a sudden, the rest of the food available was not wanted!) My solution? I started a batch of this recipe with 6-8 servings on the stove top at 8:45 at night. This soup is really just that good.

As a bonus, this soup is pretty inexpensive to make. The ingredients are either things you might already have in your house or items that are pretty cost effective. When you combine the low price point, how easy this is to make and how great it tastes, this is a soup you will want to make again and again.

What You Will Need for Crock Pot Cheesy Potato Soup for Two

Ingredients Needed

  • 2.5 cups russet potatoes, washed, peeled and cubed
  • 2 tablespoons white onion, diced
  • 1 1/2 cups chicken broth
  • 1 tablespoon all purpose flour
  • 1/3 cup milk
  • salt and pepper to taste
  • 2/3 cup shredded cheddar cheese
  • bacon cooked crisp and crumbled or real bacon bits, garnish

  • Prep Time: 10 minutes or less
  • Cooking Time: 5 to 6 hours on low or 2 hours and 30 minutes to 3 hours, on high, plus and additional 15 to 25 minutes on high, stirring halfway through the cooking time, if possible, to help all the potatoes cook evenly

    Ingredients

    • Put 2 1/2 cups Russet Potatoes (washed, peeled and cubed), 2 tablespoons white onion (washed and diced) and 1 1/2 cups chicken broth in a 3-quart or 4-quart crock pot.
    • Cover and cook on low for 5-6 hours or high for 2.5-3 hours, stirring halfway through the cooking time, if possible, to help all the potatoes cook evenly. The soup ready for next step when the potatoes have reached desired tenderness
    • Mix together 1 tablespoons all-purpose flour, salt and pepper to taste and 1/3 cup milk in a small bowl.
    • Pour mixture into the crock pot, stir until well combined and turn the heat to high, if it is not already on high.
    • Cover and cook for an additional 15-25 minutes, stirring at least once.
    • When the soup has thickened, add 2/3 cup shredded cheddar cheese and stir together until the cheese melts.
    • Garnish with bacon cooked crisp and crumbled or real bacon bits

      I love your crock pot recipes for 2. I know that summer isn’t far away – but sometimes a hot cup of soup on a chilly summer morning is a great thing to have. I have a Cuisinart crock pot that I can brown in because you said that you had a browning crock pot and I totally love mine. Thanks so much for posting yours and Michaels recipes.
