This Cheesy Crock Pot Fiesta Potato Soup for Two takes a favorite soup recipe in my family and makes it into a recipe for people who need fewer portions. The portions of this soup are hearty and filling. It really is one of those comfort food recipes that you will come back to again and again. Even better, you cook your potatoes right in your crock pot, so you there isn’t an extra pot to wash! I hope you enjoy this recipe as much as we do.

What You Will Need for Cheesy Crock Pot Fiesta Potato Soup for Two

Ingredients Needed

  • 2 medium russet potatoes, peeled and cut into large cubes
  • 1/8 teaspoon salt
  • 1/2 tablespoon dried minced onion
  • Water (enough to cover your potates)
  • 8 oz Velveeta, cut into small cubes (8 oz of Velveeta is half of a 16 oz block or 1/4 of a 32 oz block)
  • 1/2 lb ground mild sausage, browned and drained
  • 1/2 cup chunky salsa
  • 1 oz cream cheese, cubed (There are marks on the block of cream cheese for each ounce. You will use just 1 oz of the 8 oz block.)
  • 3/4 cup milk

Equipment Needed

  • Vegetable peeler
  • Sharp knife
  • Cutting board
  • Measuring spoons
  • Fork
  • Colander
  • Skillet and strainer or micro cooker
  • Measuring cups
  • 2.5 Quart Crock Pot or 3 Quart Crock Pot or 4 Quart Crock Pot
  • Stirring spatula

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time for Potatoes: 3 to 4 hours on low or 1 hour and 30 minutes to 2 hours on high, once potatoes are fork tender, strain and return to pot
  • Additional Cooking Time for Soup: 20 to 30 minutes on high, stirring every 5 to 7 minutes, until all the ingredients have melded together

    Ingredients

    • 2 medium Russet Potatoes peeled and cut into large cubes
    • 1/8 teaspoon salt
    • 1/2 tablespoon Dried Minced Onion
    • Water (Enough to cover your potato cubes.)
    • 8 oz Velveeta cut into small cubes
    • 1/2 lb ground sausage browned and drained
    • 1/2 cup Salsa
    • 1 oz cream cheese softened and cut into small cubes
    • 3/4 cup milk

    Instructions

    • Put 2 medium Russet Potatoes (peeled and cut into large cubes), 1/8 teaspoon salt and 1/2 tablespoon Dried Minced Onion in a 2.5 quart, 3 quart OR 4 quart crock pot and cover your potatoes with Water.
    • Cover and cook on low for 3-4 hours or high for 1.5-2 hours, until your potatoes are fork tender.
    • Drain your potatoes and return to your crock pot.
    • Add 8 oz Velveeta (cut into small cubes), 1/2 lb ground sausage (browned and drained), 1/2 cup Salsa, 1 oz cream cheese (cut into small cubes) and 3/4 cup milk. Stir well, cover and cook on high for an additional 20-30 minutes, stirring every 5-7 minutes, until all the ingredients have melded together. (If you want your soup to be thinner, once your ingredients have melted and blended together, add 1/4 cup of milk at a time and stir until desired consistency is reached.)
