How to Make Mississippi Beefy Vegetable Soup for Two in a Crock Pot

Don’t let the long ingredient list fool you, this Crock Pot Mississippi Beefy Vegetable Soup for Two is really easy to put together. I like to peel and cube my potatoes and slice up my carrots while I use my micro cooker browns my ground beef in the microwave. Then, once you have all of your ingredients prepped, you just put them all in your crock pot, and the crock pot does the work. When your potatoes and carrots have reached the desired tenderness, you will have an amazing soup.

What You Will Need for Crock Pot Mississippi Beefy Vegetable Soup for Two
Ingredients Needed
- 1/2 lb ground beef, browned and drained
- 1 teaspoon ranch dip mix
- 1 teaspoon brown gravy
- 2 pepperoncinis
- 1 tablespoon butter
- 1 cup beef broth
- 1/3 cup sliced baby carrots
- 1 medium sized russet potato, peeled and cubed
- 2/3 cup of canned green beans, with no juices
Equipment Needed
- Skillet and strainer or micro cooker
- Meat chopper (or a wooden spatula in a pinch)
- Measuring spoons
- Measuring cups
- Vegetable peeler
- Sharp knife
- Cutting board
- Can opener
- 2.5 quart slow cooker or 3 quart slow cooker or 4 quart slow cooker
- Stirring spatula
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 3 hours and 30 minutes to 4 hours on low or 1 hour and 45 minutes to 2 hours on high, stirring halfway through the cooking time

Crock Pot Mississippi Beefy Vegetable Soup for Two
Ingredients
- 1/2 lb ground beef browned and drained

- 1 cup Beef Broth
- 1 medium Russet Potatoes peeled and cubed
- 1/3 cup bag baby carrots sliced
- 2/3 cup green beans without juices
Instructions
- Combine all your ingredients in a 2.5 quart, 3 quart or 4 quart slow cooker, stir well and make sure your vegetables are covered by your broth.
- Cover and cook on low for 3.5-4 hours or high for 1 hour and 45 minutes – 2 hours, stirring occasionally. (It is done when the vegetables reach desired tenderness.)

I read you like hearing from folks, and thought its about time I said something. I have been following you for a long time, and your receipes are simply the best. Like normal families eat, not all this super fancy, super expensive things, that in todays world most families cannot afford. My husband passed a few years back and he too, always enjoyed all your dishes when I made them.
