This recipe is so simple to throw together. I am a huge fan of dump and go recipes like this Crock Pot Shredded Chicken for Two. Beyond being easy, this recipe tastes great and gives you tender chicken that can be used multiple ways. You can eat it as a main dish just as it is, or you can put it on a salad or in a burrito or on a bun or (fill in the blank with your favorite idea). As an added bonus, my little picky eater has given this main dish her stamp of approval. So, this is great for anyone who needs to feed their own picky eater.

  • 1/2 lb boneless, skinless chicken thighs (or boneless, skinless chicken breast cut into thigh size pieces), trimmed
  • 1 1/2 teaspoons ranch dip mix
  • 1/2 cup chicken broth
