We love quick and easy recipes in this house. One great thing about converting larger recipes into recipes with two servings is that they cook up so much faster since the insert of my slow cooker is not at last two thirds full. It means that I can totally space putting a recipe on for dinner until the afternoon and still have dinner on the table by the time the kids are telling me they are hungry. This Cheesy Crock Pot Sloppy Joe Chicken for Two recipe cooks up super fast in my smaller slow cookers and tastes just as good as the original recipe! What You Will Need for Cheesy Crock Pot Sloppy Joe Chicken for Two
Ingredients Needed
- 2 boneless, skinless chicken thighs
- 1 clove garlic, minced
- 2 tablespoons onion, diced
- 1/4 cup ketchup
- 1 teaspoon brown sugar, packed
- 1/4 teaspoon Worcestershire sauce
- 1/2 cup shredded sharp cheddar
- 2 hamburger buns
Equipment Needed
- Garlic press or sharp knife
- Measuring cups
- Measuring spoons
- Small mixing bowl
- Stirring spatula
- 2.5 quart slow cooker or 4 quart slow cooker
- 2 forks
- Slotted spoon
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 1 hour and 30 minutes to 2 hours on low or 45 minutes to 1 hour on high, rotating your insert halfway through cooking if your crock pot does not cook evenly
- Shredding Time: 3 minutes

Cheesy Crock Pot Sloppy Joe Chicken for Two
Ingredients
- 2 boneless, skinless chicken thighs
- 1 clove garlic minced
- 2 tablespoons onion diced
- 1/4 cup ketchup
- 1 teaspoon packed brown sugar
- 1/4 teaspoon Worcestershire sauce
- 1/2 cup shredded sharp Cheddar cheese
- 2 hamburger buns
Instructions
- Lightly spray your 2.5 quart or 4 quart crock pot with cooking spray.
- Place your chicken in your crock pot.
- In a small bowl, mix together all your remaining ingredients, except your cheese and buns, and pour over your chicken.
- Cover and cook on low for 1.5-2 hours or high for 45 minutes to 1 hour.
- Shred your chicken with 2 forks.
- Add your cheese and stir until melted.
- Serve with a slotted spoon on your hamburger buns.
