I love it for those reasons and that it is incredibly easy to put together. When thinking of the next recipe I wanted to adapt for our readers that ask for recipes with two servings, I knew this would be a great one to try!

If you look at the original recipe and this recipe side by side, you will probably notice that the cooking time is much shorter. The reason for this is that the crock pot isn’t near as full with a recipe for two as it is when there are six servings. So, it cooks up faster. You will want to watch it closely to make sure you know exactly when the center of your chicken reaches at least 165 degrees Fahrenheit in your unit. We prefer the texture of the chicken when it reaches 170 degrees, but that is totally a preference thing and not a food safety thing.

  • 2 teaspoons of a ranch dip mix packet

  • Place your chicken in a lightly greased 2.5 quart slow cooker or 4 quart slow cooker.
  • Mix together your gravy and ranch packets with your water and pour over your chicken.
  • Cover and cook on low for 1 hour and 45 minutes to 2 hours or high for 50 minutes to 1 hour.
  • Once the center of your chicken has reached at least 165 degrees Fahrenheit, place your thighs on each plate, stir cooking juices and pour over each chicken thigh, it will slightly thicken as it cools down.
