How to Make Brown Sugar Bacon Pork Chops for Two in a Crock Pot

Aunt Lou here.

If you have ever tried a recipe with brown sugar and bacon together, you know that the sweet and savory combination is incredibly delicious. This Brown Sugar Bacon Crock Pot Pork Chops for Two is no different. The sweet and savory of the brown sugar and bacon infuse the pork chop, and by cooking these in a crock pot, the pork chop is juicy and fall apart tender. It is an incredible combination.

You will want to watch your pork chops closely the first time you make them so you can have your broiler ready to go as soon as the internal temperature of your pork chops reaches 145 degrees Fahrenheit. The broiler cooking step is going to crisp up your bacon and caramelize the brown sugar with the bacon juices. It only takes a few minutes in the broiler, and then you are ready to dive into these amazing pork chops.

(Psst…if you need more servings, check out our original recipe here.)

Ingredients

  • 2 boneless pork chops
  • 4 pieces bacon (If your bacon pieces are small, you might need 6 pieces.) divided
  • 1/4 cup brown sugar

Instructions

  • Wrap 2 to 3 pieces of bacon around each pork chop. (How many pieces per chop will depend on how big your pieces of bacon are.)
  • Place bacon wrapped chops in a 2.5 quart or 4 quart crock pot.
  • Sprinkle brown sugar evenly over the top of your pork chops.
  • Cover and cook on low for 2.5-3 hours or high for 1 hour and 15 minutes to 1.5 hours. (Turn your insert halfway through cooking if your slow cooker does not cook evenly.)
  • Once the internal temperature of your pork chops has reached 145 degrees Fahhrenheit, place pork chops on a baking sheet covered with parchment paper and spoon some of the cooking liquid over your chops. Broil on high for approximately 3 minutes until your bacon reaches your preferred amount of browning. (Do NOT walk away while using your broiler. Watch it continually.)
  • Serve with cooking juices spooned over pork chops.
