How to Make Bacon Wrapped Pork Chops for Two in a Crock Pot

We are often asked if we can make recipes with just two servings. So, I thought I would give it a try with this Bacon Wrapped Crock Pot Pork Chops for Two. It takes our one of our tried and true recipes that has six servings and reduces it down to a recipe for just two people. (Psst…if you need more servings, you can find the original recipe here.)
When making recipes with fewer servings, you will be using less of each ingredient, obviously. When Michael and I visited his Great Aunt T a while back, she was talking about recipes with me. She showed me that she would open a packet of seasoning and use some of it for a recipe and then put the packet in a baggie to keep the rest of later use. I love this idea. I thought it would be a useful tip to pass along to you!
What You Will Need for Bacon Wrapped Crock Pot Pork Chops for Two
Ingredients Needed
- 2 boneless, center cut pork chops (about a half inch to an inch thick)
- 4 pieces of bacon, divided
- 1/2 cup beefy mushroom soup
- 2 teaspoons brown gravy mix
Equipment Needed
- Measuring cup
- Measuring spoon
- Spoon
- 2.5 Quart Crock Pot or 3 Quart Crock Pot
- Optional: baking pan and parchment paper
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 2.5 to 3 hours on low or 1 hour and 15 minutes to 1.5 hours on high, rotating your insert halfway through cooking time if your slow cooker unit does not cook evenly
- Optional Broiling Time: approximately 3 minutes

Bacon Wrapped Crock Pot Pork Chops for Two
Ingredients
- 2 boneless pork chops about an inch thick
- 4 slices bacon
- 1/2 cup can beefy mushroom soup
- 2 teaspoons brown gravy mix packet
Instructions
- Sprinkle your gravy mix over the top evenly.
- Pour your soup evenly over everything.
- Cover and cook on low for 2.5-3 hours or 1 hours and 15 minutes to 1.5 hours on high, turning your insert halfway through cooking if your slow cooker does not cook evenly.
- If desired, turn broiler on high and place bacon wrapped pork chops on a baking sheet lined with parchment paper (for easy clean up) and broil for approximately 3 minutes, until bacon reaches desired crispness.
