This recipe for Crock Pot Pineapple Chicken is one of those recipes I will make again and again. Not only is it super easy to put together, the sweet and tangy flavor of this dish is enough to make your mouth water. My family and I absolutely loved this, and I hope you and your loved ones will too!

We often get asked by readers for recipes with fewer servings. This delicious dish only has four servings, at most, so that fits the bill for that request. However, this recipe can easily be doubled or tripled if you need more servings or want leftovers. You will just want to use a larger crock pot and watch it closely to adjust timing as needed.

What You Will Need for Crock Pot Pineapple Chicken

Ingredients Needed

  • 1.25 lbs of boneless, skinless chicken, trimmed and cubed
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 3 tablespoons honey
  • 1/4 tablespoon ground ginger
  • 1 tablespoon corn starch
  • 1 tablespoon water
  • White rice, prepared

Equipment Needed

  • Sharp knife
  • Cutting board
  • Measuring cups
  • Garlic press
  • Measuring spoons
  • 2 small bowls
  • Wooden spoon
  • 2 to 3 quart crock pot
  • Whatever you need to make your favorite rice

Time Needed

  • Prep Time: 10 minutes or less
  • Cooking Time: 2 hours and 30 minutes to 3 hours on low or 1 hour and 15 minutes to 1 hour and 30 minutes on high, stirring halfway through cooking
  • Thickening Time: Approximately 10 minutes, stirring frequently until thickened

Instructions

  • Place your cubed chicken and pineapple chunks in a 2-3 quart slow cooker.
  • In a small bowl, mix together soy sauce, garlic, brown sugar, honey and ground ginger until well combined.
  • Pour your mixture over everything.
  • Cover and cook on low for 2.5-3 hours or high for 1 hour 15 minutes-1 hour 30 minutes, stirring halfway through cooking.
  • If your slow cooker isn't already on high, turn it on high.
  • Mix together your corn starch and cool water in a small bowl.
  • Stir the corn starch mixture into your slow cooker and stir frequently for about 10 minutes, until your sauce has thickened up.
  • Serve chicken, pineapple and sauce spooned over a bed of prepared rice.
