I recently made a version of this recipe with bone-in pork chops recently. My entire family loved the original recipe, and I knew instantly I wanted to make this Honey Garlic Crock Pot Chicken with Rice recipe. I had a hunch that this sauce would go really well over rice, and boy does it ever!

This is a really quick recipe to throw together. You don’t necessarily have to do the thickening step at the end of the recipe, but I highly recommend it. In my opinion, it just takes the sauce up to a whole new level. If you are new to cooking and haven’t ever thickened a sauce with water and cornstarch, it takes a little bit of time, but don’t worry, it will thicken. You will also want to remember that once the sauce starts to cool, it will thicken up more. So, have some patience and trust the process. You will love the results!

What You Will Need for Honey Garlic Crock Pot Chicken with Rice

Ingredients Needed

  • 2 lbs boneless, skinless chicken, cubed
  • 1/2 cup honey
  • 1/4 cup brown sugar, packed
  • 1/2 cup ketchup
  • 3 tablespoons low sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon corn starch
  • 1 tablespoon cold water

Equipment Needed

  • Sharp knife
  • Cutting board
  • Measuring cups
  • Measuring spoons
  • Medium bowl
  • Stirring spatulas
  • 4 quart slow cooker
  • Covered dish (to keep your chicken warm while you thicken the sauce)
  • Medium Sauce pan
  • Small bowl or coffee cup

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 2 to 4 hours on low or 1.5 to 2 hours on high, stirring halfway through
  • Sauce Thickening Time: 10 minutes over medium high heat, stirring frequently

Ingredients

Instructions

  • Place your cubed chicken in the bottom of your 4 quart crock pot.
  • In a medium size bowl, mix together your honey, brown sugar, ketchup, soy sauce and garlic until well blended.
  • Pour your sauce over your cubed chicken.
  • Cover and cook on low for 2-4 hours or on high for 1-2 hours, stirring halfway through cooking.
  • Remove your chicken and place in a dish to keep warm.
  • Pour the sauce from cooking into a medium sauce pan.
  • In a small bowl or coffee cup, mix together the corn starch and water until completely blended and stir into the sauce.
  • Heat over medium high heat until it is at a rolling boil (about 3 minutes), reduce heat and cook at a simmer for approximately 7-10 minutes more, stirring continually, until it is just a little thinner than you want it. (It will thicken as it cools.)
  • Serve chicken over a bed of rice with the sauce spooned over top.
