How to Make Poor Man’s Steak with Gravy in a Slow Cooker
Aunt Lou here.
We have an entire line of “with gravy” recipes for a reason. These recipes are so incredibly easy and so delicious! Whether you are in the mood for chicken, pork or beef, we have you covered. This Crock Pot Poor Man’s Steak with Gravy recipe gives you a way to take a cheaper cut of meat and still have an amazing dish for dinner.
This recipe only has a pound of meat in it. So it is perfect for our readers that have been asking for recipes with fewer servings! However, if you need more servings, you could probably bump the amount of meat up to 2 lbs without changing the delicious gravy ingredients. I would use a 4 quart slow cooker for 2 lbs of meat. Need more meat than 2 lbs? You can use 3-4 lbs and double the ingredient amounts for the gravy. For 3 or 4 lbs of meat, I would use a 6 quart slow cooker. Your cooking times should be similar for any of these amounts. As always, watch the recipe closely the first time you make it so you know how your slow cooker does with this particular recipe.
What You Will Need
Ingredients Needed
- 1 lb cubed steak
- 1 oz package onion soup mix
- 1/3 cup water
- 10 3/4 ounce can cream of mushroom soup
Equipment Needed
- Measuring Cup
- Bowl
- Spatula
- 2 quart crock pot
Time Needed
- Prep Time: 5 minutes or less
- Cooking Time: 6-8 hours (I do not recommend cooking this recipe on high. With beef, you can take a tougher piece of meat and make it tender by cooking low and slow. If it is still tough, it needs to cook longer.)

Have you ever used frozen cube steak before?
Aunt Lou says
Food experts do not recommend cooking frozen meats in a crock pot because it could possibly result in a food borne illness. You can read more about it here: https://ask.usda.gov/s/article/Is-it-safe-to-cook-frozen-foods-in-a-slow-cooker-or-crock-pot. So, we would recommend thawing the cube steak first.

Can this be frozen?
Aunt Lou says
I haven’t ever tried freezing the leftovers but think it could work. If you give it a try, let me know how it goes!

Made this with 2 nice sized chuck steak that i cut into quarters. With 2 cans of soup, onion soup mix, i added some tomato paste, minced garlic, beef bouillon and generous cracked pepper
Put it on low, and let it cook for 3 hours. Made a pot of mashed potatoes to go with it! It was very good!
Aunt Lou says

I use Campbell’s cheddar cheese soup, Campbell’s beefy mushroom soup, and a can of cream of mushroom! I sear it quickly in frying pans put in crockpot and Mix soup! I have also used the Campbell’s French onion soup instead of beefy mushroom but I like mushrooms so I like beefy mushroom better! My grandma taught me this recipe and it’s so easy! 3 cans of soup, meat and turn on low! Go to work, come home and it’s ready! I also serve with rice!

This recipe for cube steak and gravy looks delicious but my husband would die if he realizesd it has mushrooms in it. And due to my Illness he’s doing the shopping. What can I use to replace the mushroom soup?
Aunt Lou says
Hi Renae!
I haven’t tried this with a different kind of soup, but you might try cream of celery. Or Cris has a great recipe for Cream Soup Substitute. https://www.recipesthatcrock.com/cream-soup-substitute-recipes/
If you give it a try with either, let me know how it turns out!

What kind of cubed steak? What cut of meat?
Aunt Lou says
Hi Kristen!
In my store, it just said “cubed steak” on the package. It is a cut of beef. Hope that helps! Enjoy!

PatW says
Cube steak or cubed steak is a cut of beef, usually top round or top sirloin, tenderized and flattened by pounding with a meat tenderizer. The name refers to the shape of the indentations left by that process. This is the most common cut of meat used for the American dish chicken fried steak. Wikipedia
