How to Make Potato Salad in a Crock Pot

Have you ever seen Cris’ No Peel Crock Pot Boiled Eggs? It is a pretty nifty way to make up hard boiled eggs without having to peel them! I mean, come on, who actually LIKES to peel eggs? Not me! So when thinking of classic summer recipes, Cris asked if I would like to make up a potato salad recipe. I had never made it before, but thought it could be a good one. So why not?!

Since I had never made potato salad before, I needed a recipe. There are lots of “best ever potato salad” recipes out there. They were all just a little different, which is good! Variety is the spice of life after all…right? Then I had a face palm moment. What was I doing looking around for ideas for the recipe when I had a great resource right at my fingertips? Momma! So I asked her about it. She said she always used Gramma’s recipe. We just passed the 5 year anniversary of us losing Gramma, so I thought it would be great to use her recipe.

We had some of this yummy Crock Pot Potato Salad, and I gave some to Mom and Dad. Everyone agreed that it was delicious! I am guessing you and your loved ones will love it as well!

Don’t let the number of ingredients or steps scare you. You are making something from scratch, so there are bound to be a bunch of both. This really is a simple recipe. You can do it! I promise. Girl Scout’s honor!

What You Will Need

This Crock Pot Potato Salad is super easy to make and has an amazing flavor! The secret? The recipe is my Grammas! Everyone will want your recipe!

Ingredients Needed

  • 4 cups potatoes peeled and cubed (about 4 large Russet potatoes)
  • 3 large eggs
  • 2 ribs celery sliced
  • 1/ 2 cup sweet pickle relish
  • 1 tablespoon onion flakes
  • 1/4 cup green pepper chopped
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 cup mustard

Equipment Needed

  • Pairing knife
  • Oven safe bowl that will fit in your 6-quart crock pot
  • 6-quart slow cooker
  • Cutting board
  • Large mixing bowl

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 4 hours
  • Chilling Time: 30-45 minutes

Ingredients

  • 4 cups potatoes peeled and cubed (about 4 large Russet potatoes)
  • 3 large eggs
  • 2 ribs celery sliced
  • 1/ 2 cup sweet pickle relish
  • 1 tablespoon onion flakes
  • 1/4 cup green pepper chopped
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/4 cup mustard

Instructions

  • Place a slightly greased oven safe bowl inside your 6-quart slow cooker
  • Arrange your potatoes around your bowl
  • Crack your eggs open and pour into the bowl
  • Add enough water in the insert (do not get any in your bowl with your eggs) to cover your potatoes (your bowl will rise up some)
  • Cover and cook for 1.5-2 hours on high, until your eggs are completely set
  • Remove the oven safe bowl and gently dump your eggs on a cutting board
  • Recover your crock pot and continue cooking on high for an additional 2-2.5 hours, until your potatoes are fork tender
  • Chop your eggs and place in your refrigerator to chill
  • Once your potatoes are cooked, drain and rinse in cold water to cool them down
  • Place all your ingredients in a large bowl and mix until well combined
  • Place back into your refrigerator for 30-45 minutes to chill
