For years readers have asked me for a good slow cooker country rib recipe, and while I tried several, this is by far my favorite and just so happens to be low carb too! (Looking for more low carb recipes? Here are some of our favorites.) This recipe is incredibly simple to make and turn out great every time! You can serve with your favorite BBQ sauce or dip in ranch dressing like we do.

Crock Pot Country Ribs – Bacon Ranch (Low Carb)

Ingredients for Crock Pot Country Ribs – Bacon Ranch (Low Carb)

  • 3 lbs Country Style Pork Ribs
  • 1 lb Bacon (We use thick cut bacon)
  • 2 packets Ranch Dressing Mix

How to Make Country Ribs in a Slow Cooker

  1. Pour Ranch Mix into a gallon sized baggie and toss ribs in a few at a time to coat.
  2. Once coated, wrap each rib in bacon and place into a 6 quart slow cooker, layering if needed.
  3. Cook on low for 8 hours.
  4. Place ribs on a lined cookie sheet and broil on each side for a few minutes to crisp up bacon.
  5. Serve with your favorite BBQ sauce or with Ranch for dipping.

  • We like to use these liners for our cookie sheets.
  • As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.
  • Some broilers also cook a lot hotter than others. Watch very closely so you do not burn your ribs.
  • According to our calculations, each serving contains approximately 1.6 net carbs using the ingredients we used.

    We are not fans of Ranch Dressing flavor.
    Can you suggest a substitute for it in the Bacon-Wrapped Rib recipe, please?

      Hi Debra!

      I would probably sprinkle them with Lawry’s seasoning before wrapping them if you would prefer to not use the ranch mix. Enjoy!!

      I was out of ranch so I used Lemon Pepper and it was DELICOUS.

      I’m going to try either McCormick’s Cajun seasoning -OR- Goya Fajita seasoning next. I use the thick cut bacon from Costco.
