This 4 Ingredient Crock Pot Chicken for Two recipe is just as amazing as the original recipe. For this adaptation, I have added the double broiler method for 3 or 4 quart crock pots. With a recipe with fewer ingredients that is also making a sauce, I find that using the double broiler method in the larger slow cooker is a great way to make sure the edges don’t burn or get stuck to the sides of the insert.

What You Will Need for 4 Ingredient Crock Pot Chicken for Two

Ingredients Needed

  • 1/2 lb boneless, skinless chicken thighs, trimmed (You can use chicken breast meat if you prefer white meat. However, to keep a similar cooking time, you will need to cut the breast into thigh size pieces.)
  • 1/2 cup cream of mushroom soup
  • 1/2 cup golden mushroom soup (You can substitute with beefy mushroom soup in a pinch.)
  • 1/2 cup French onion soup
  • Optional: cooked white rice, for serving

Equipment Needed

Time Needed

  • Prep Time: 5 minutes or less
  • Cooking Time: 1 hour and 40 minutes to 3 hours on low or 50 minutes to 1 hour and 30 minutes on high (The lesser cooking time is for a 2.5 quart slow cooker. The greater time is for when you are using the double broiler method in a 3 or 4 quart slow cooker. Turn your insert halfway through cooking if you are using a 2.5 quart slow cooker, and it does not cook evenly.)

    Instructions

    • Mix together your soups in a small heat safe mixing bowl.
    • If you are using a 2.5 quart slow cooker, place your chicken in the bottom and pour your soup mixture over top. If you are using a 3 or 4 quart slow cooker, pour some water in the bottom of your insert, place your mixing bowl of soups on top of the water (make sure the water doesn't come over halfway up the side of the bowl), place your chicken in the bowl and spoon the soups over top.
    • Cover and cook 1 hour and 40 minutes to 3 hours on low or 50 minutes to 1 hour and 30 minutes on high (The lesser cooking time is for a 2.5 quart slow cooker. The greater time is for when you are using the double broiler method in a 3 or 4 quart slow cooker. Turn your insert halfway through cooking if you are using a 2.5 quart slow cooker, and it does not cook evenly.)
    • Once chicken is done, take two forks and shred the chicken into bite size pieces and stir back into sauce. If desired, serve chicken and cooking juices over a bed of prepared rice.

      Sorry if this is a silly question, but do I had water to the condensed soup as usual when using it in this recipe? I assume so but Iโ€™m not sure if that would effect the intended consistency. Thanks!

        You do not add water to the condensed soups in any of our recipes, unless we specifically state in the ingredient list to add water to the soup or soups. You are correct in assuming it would change the consistency of the recipe to add water to the soups. I hope this helps and that you enjoy this recipe as much as we do!
