How to Make Mississippi Chicken for Two in a Crock Pot

I knew this Crock Pot Mississippi Chicken for Two would be a great recipe to easily convert from the original recipe, but if you are needing more servings, you can find the original recipe here.
When making recipes with two servings, you normally have more left in the package of your ingredients. For instance, the packages of thighs I have usually has eight in it, and the packets of mixes have 1 oz. So, what to do with the rest of the ingredients? I like to put the remaining chicken thighs in a reusable container with a lid and get out what I need throughout the week to make different recipes. With the mixes, I get the air out of the packet, roll the packet down to the remaining mix and wrap it with a rubber band. With doing this, I can usually get 2-3 recipes out of one packet. This makes it so I can make my grocery dollars go even farther.
What You Will Need for Crock Pot Mississippi Chicken for Two
Ingredients Needed
- 2 boneless, skinless chicken thighs, trimmed (You can use a chicken breast cut into thigh size pieces if you prefer white meat.)
- 1 tablespoon butter, sliced into thin pats
- 2 teaspoons ranch dip mix
- 2 teaspoons brown gravy mix
- 2 pepperoncini
Equipment Needed
- Sharp knife
- Cutting board
- Butter knife
- Measuring spoons
- 2.5 quart slow cooker or 4 quart slow cooker
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 2 hours and 10 minutes to 2 hours and 40 minutes on low or 1 hour and 5 minutes to 1 hour and 20 minutes on high, turning your insert halfway through cooking if your slow cooker does not cook evenly

Crock Pot Mississippi Chicken for Two
Ingredients
- 2 boneless skinless chicken thighs (You can use a chicken breast cut into thigh size pieces if you prefer white meat.)
- 2 teaspoons Ranch Dressing Mix
- 2 teaspoons Au Jus Gravy Mix or Brown Gravy Mix
- 1 tablespoon butter
- 2 Pepperoncinis
Instructions
- Lay chicken thighs in the bottom of your 2.5 quart or 4 quart slow cooker.
- Sprinkle mixes on top.
- Place butter on top.
- Add pepperoncinis around your chicken.
- Cook for 2 hours and 10 minutes to 2 hours and 40 minutes on low or 1 hour and 5 minutes to 1 hour and 20 minutes on high, turning your insert halfway through cooking if your slow cooker does not cook evenly.
