How to Make Mississippi Chicken Sandwiches in a Crock Pot

We love the Mississippi Style way of cooking at both my house and Cris and Mikey’s house. I noticed that Cris had made Crock Pot Mississippi Beef Sandwiches and posted the recipe, but we did not have a chicken version of that recipe. I knew I had to remedy that right quick! My family loved these chicken sandwiches. I bet your and your loved ones will too. If you need to feed a crowd, this recipe is super easy to double or triple. You will just want to use a larger crock pot.
One step that really adds a great layer of flavor is toasting your roll. It makes this sandwich taste like a toasted sandwich. I loved how the flavors of the toasted roll, Mississippi chicken, tomato and French fried onions all come together to give you an amazing sandwich.
What You Will Need for Mississippi Crock Pot Sandwiches
Ingredients Needed
- 2 lbs boneless, skinless chicken thighs, trimmed (or boneless, skinless chicken breasts cut into thigh size pieces)
- 1 packet powdered ranch dip mix
- 1 packet powdered brown gravy mix
- 1/2 Cup stick of butter (plus more for sub rolls)
- 6 pepperoncini
- French Fried Onions
- 1 Large Tomato Sliced
- 6 Sub Rolls
Equipment Needed
- Sharp knife
- Cutting board
- 2 forks or stand mixer
- Butter knife
- Skillet or griddle
- 4 quart slow cooker
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 4 to 5 hours on low or 2 to 2.5 hours on high
- Additional Time: 5 minutes to shred chicken and 5 minutes to toast rolls

Mississippi Crock Pot Chicken Sandwiches
Ingredients
- 2 lb boneless skinless chicken thighs (or breasts cut into thigh size pieces)
- 1 packet powdered ranch dip mix
- 1 packet powdered brown gravy mix
- 1/2 cup stick butter plus more for sub rolls
- 6 pepperoncini
- French Fried Onions
- 1 large tomato sliced
- 6 sub rolls
Instructions
- Place chicken in a 4 quart slow cooker.
- Sprinkle mixes on top.
- Place butter on top and pepperoncini around the chicken.
- Cook on low for 4-5 hours or 2-2.5 hours on high, until easily shredded with 2 forks.
- Shred with forks or a stand mixer and return to crock pot.
- Butter sub roll insides and toast in a med-high skillet or griddle.
- Slice tomatoes and place on one side of the roll, topping with shredded chicken.
- If desired, slice pepperoncini and place on top of the chicken.
- Top sandwiches with french fried onions and top sub roll. Slice sandwiches in half before serving if desired.
Notes
- The chicken is very juicy, so toasting the rolls help keep the bun from getting too soggy. This is however a very messy sandwich to eat (although very rewarding for the trouble!).
