How to Make Taco Macaroni Casserole for Two in a Crock Pot

I was recently asked by one of our readers how to make the original Crock Pot Taco Macaroni Casserole into a recipe for two. I was happy to do some testing to convert this recipe. My family loved the original, so I had an idea that they would enjoy this one too, and I was right.
This recipe has a bit of prep work, but it is still pretty easy to put together. So, I would still consider it a good recipe for someone who is new to cooking. Once you get everything into your insert, the slow cooker does the work for you.

What You Will Need for Crock Pot Taco Macaroni Casserole for Two
Ingredients Needed
- 1/2 lb ground beef, cooked and drained
- 1 tablespoon taco seasoning
- 1/2 cup tomato paste
- 1/4 cup onion, diced
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground black pepper
- 1 cup macaroni, cooked al dente (The measurement for the macaroni is done before cooking it.)
- 1 cup canned diced tomatoes, drained
- 1/2 cup shredded cheddar cheese
- Cooking spray
Equipment Needed
- Skillet and strainer (I really like my on-pot strainer) or micro cooker
- Meat chopper
- Small pot
- Small colander
- Medium mixing bowl
- Stirring spatula
- 2.5 quart slow cooker, 3 quart slow cooker, 4 quart slow cooker OR 2.5 quart small casserole crock pot
Time Needed
- Prep Time: 15 to 20 minutes
- Cooking Time: 2 to 3 hours on low or 1 hour to 1 hour and 30 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly

Crock Pot Taco Macaroni Casserole for Two
Ingredients
- 1/2 lb ground beef browned and drained
- 1 tablespoon taco seasoning
- 1/2 cup tomato paste
- 1/4 cup onion diced
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground black pepper
- 1 cup elbow macaroni cooked al dente (The measurement is made before cooking.)
- 1 cup canned diced tomatoes drained
- 1/2 cup Shredded Cheddar Cheese
Instructions
- Combine beef, taco seasoning, tomato paste, onion, garlic salt and pepper in a medium bowl.
- In a lightly greased 2.5 quart slow cooker, 3 quart slow cooker, 4 quart slow cooker OR 2.5 quart small casserole crock pot, layer your ingredients in this order: macaroni, tomatoes, beef mixture, cheese.
- Cover and cook on low for 2-2.5 hours or high for 1 hour to 1 hour and 15 minutes, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly, until cheese is melted and bubbly on the sides.
