This Crock Pot Shredded Taco Chicken for Two is great on its own, in a taco, in a burrito, in a taco salad and more. What is even better is that it is super simple to put together and incredibly delicious. If you happen to need more servings, you can find the original recipe here.
If you have taken a peek at the recipe, you will see that the timing isn’t just a range from one rounded out hour or half hour to the next. There is a reason for this. I often find when I am cooking for two that at the hour or half hour mark, it is almost finished but not quite. I learned the hard way that waiting for another half hour to pass, like I would with a bigger recipe, usually ends up in the recipe being overcooked, and I have to start all over again. So, while I know the cooking times look a little wonky, I want to make sure the recipe is written in a way that is going to give you the best chance for success.
What You Will Need for Crock Pot Shredded Taco Chicken for Two
Ingredients Needed
- 2 boneless, skinless chicken thighs
- 1 tablespoon taco seasoning (half of a 1 oz taco seasoning packet)
- 1/4 cup chicken broth
Equipment Needed
- Sharp knife
- Cutting board
- Measuring cup
- Stirring spatula
- Measuring spoon
- Small mixing bowl
- 2.5 quart slow cooker to 4 quart slow cooker
- Two forks or a stand mixer (for shredding your chicken)
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 2 hours to 2 hours and 10 minutes on low or 1 hour to 1 hour and 5 minutes on high, turning your insert halfway through cooking if your slow cooker does not cook evenly (It is done when the internal temperature of your chicken reaches at least 165 degrees Fahrenheit.)
- Shredding Chicken: 5 minutes

Crock Pot Shredded Taco Chicken for Two
Ingredients
- 2 boneless skinless chicken thighs trimmed
- 1 tablespoon taco seasoning
- 1/4 cup chicken broth
Instructions
- Put your chicken in the bottom of your 2.5 quart or 4 quart slow cooker.
- Pour your broth over your chicken.
- Sprinkle taco mix on top of everything.
- Cover and cook 2 hours to 2 hours and 10 minutes on low or 1 hour to 1 hour and 5 minutes on high, turning your insert halfway through cooking if your slow cooker does not cook evenly (It is done when the internal temperature of your chicken reaches at least 165 degrees Fahrenheit.)
- Shred your chicken with two forks or a stand mixer.
