How to Make Taco Macaroni Casserole in a Crock Pot

I thought this Crock Pot Taco Macaroni Casserole would be good when I came up with the idea. It is very similar to our Crock Pot Meaty Mac Casserole with a few changes, and I know how much we enjoy that recipe. However, I had no idea how well this recipe would go over with my family! Everyone from my parents to my kids loved this recipe.
There is a little bit of prep work for this one since you need to brown the ground beef and cook your noodles (Make sure you do not cook them more than al dente so they are perfect at the end of the crock pot cooking time.), but it those are not hard steps. The end result is definitely worth it too! The cooking time in the crock pot gives the flavors a chance to meld together and the cheese a chance to melt. The end result is delicious!
What You Will Need for Crock Pot Taco Macaroni Casserole
Ingredients Needed
- 1 lb ground beef, browned and drained
- 1 oz packet taco seasoning
- 2 cups macaroni, cooked al dente (You measure the macaroni before you cook it.)
- 14.5 oz diced tomatoes, drained
- 6 oz tomato paste
- 1/2 cup onion, chopped
- 1 1/4 cup shredded Cheddar cheese, plus more for garnish if desired
- 1 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Equipment Needed
- Skillet and strainer or micro cooker
- Mix n chop
- Measuring cups
- Can opener
- Sharp knife
- Cutting board
- Measuring spoons
- Medium bowl
- 6 quart crock pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 2 to 2.5 hours on low

Crock Pot Taco Macaroni Casserole
Ingredients
- 1 lb ground beef browned and drained
- 1 oz taco seasoning
- 2 cups elbow macaroni cooked al dente (The measurement is made before cooking.)
- 14.5 oz can diced tomatoes drained
- 6 oz tomato paste
- 1/2 cup onion chopped
- 1 1/4 cup Shredded Cheddar Cheese
- 1 teaspoon garlic salt
- 1/2 teaspoon Pepper
Instructions
- Combine beef, taco seasoning, tomato paste, onion, garlic salt and pepper in a medium bowl.
- In a lightly greased 6 quart crock pot, layer your ingredients in this order: macaroni, tomatoes, beef mixture, cheese.
- Cover and cook on low for 2-2.5 hours, until cheese is melted and bubbly on the sides.
- Serve with a sprinkling of shredded cheddar cheese, if desired.
