How to Make Meaty Mac Casserole in a Crock Pot

When thinking up recipes this week, I enlisted the help of Michael (not Mikey…it can get confusing when sisters are married to two guys with the same first name lol). I wanted to make a recipe using ingredients we already had in the house. So, together we came up with this delicious Crock Pot Meaty Mac Casserole.
When creating a new recipe, you do your best to put together ingredients you think will work well together. Sometimes it does not work. Other times, the combination is so much better than you thought it would be! This recipe was definitely the latter. To quote my 8 year old, Ryder, “All the flavors mix together really well. It tastes amazing!” I guess growing up with a mom who develops recipes and discusses them with her family turns you into a mini food connoisseur! 😉 Michael and I had to agree! The flavors cook into the macaroni noodles to give you an all around flavorful dish!
What You Will Need
Ingredients Needed
- 1 lb ground beef, browned and drained
- 1/2 lb bacon, cooked crisp and crumbled
- 2 cups elbow macaroni, cooked al dente (The measurement is made before cooking.)
- 14.5 oz diced tomatoes, drained
- 6 oz tomato paste
- 1/2 cup chopped onion
- 1 1/4 cup shredded Cheddar cheese
- 1 teaspoon garlic salt
- 1/2 teaspoon pepper
Equipment Needed
- Skillet and strainer or micro cooker
- Griddle or skillet
- Pot and strainer
- Can opener
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoons
- Medium bowl
- Stirring spatula
- 6 quart crock pot
Time Needed
- Prep Time: 10 to 15 minutes
- Cooking Time: 2 to 2.5 hours on low

Crock Pot Meaty Mac Casserole
Ingredients
- 1 lb ground beef browned and drained
- 1/2 lb bacon cooked crisp and crumbled
- 2 cups elbow macaroni cooked al dente (The measurement is made before cooking.)
- 14.5 oz can diced tomatoes drained
- 6 oz tomato paste
- 1/2 cup onion chopped
- 1 1/4 cup Shredded Cheddar Cheese
- 1 teaspoon garlic salt
- 1/2 teaspoon Pepper
Instructions
- Combine beef, tomato paste, onion, garlic salt and pepper in a medium bowl
- In a lightly greased 6 quart crock pot, layer your ingredients in this order: macaroni, tomatoes, beef mixture, crumbled bacon, cheese
- Cover and cook on low for 2-2.5 hours

can this recipe be doubled? and if so do I cook longer?

I haven’t tried doubling this recipe. If I did, I would probably put it in at least an 8 quart crock pot. As for the cooking time, without testing it, I am not sure. I recommend making it for the first time when you can watch it closely and have time to extend the time if needed. If you give it a try, let me know how it goes!
