How to Make Potatoes and Carrots in a Crock Pot

I have to brag on my husband for a bit. You see, he loves to cook and loves to help me come up with recipe ideas. There are even times when I am not in the kitchen that he will surprise me with coming up with a recipe all on his own. Such is the case with this Crock Pot Potatoes and Carrots recipe. He did an awesome job on it. You are going to love it!

This recipe is a fantastic way to have veggies ready for a few meals with just one time of cooking! They taste just as good heated up as they do the first night. It was such a relief to not have to worry about what sides we were going to have for a few nights!

What You Will Need

Ingredients Needed

  • 3 lbs red potatoes
  • 16 oz bag baby carrots
  • 1 medium onion, sliced
  • 32 oz chicken broth
  • Water (You will want enough to barely cover your veggies. We used between 2 and 3 cups.)
  • 1 teaspoon seasoning salt
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground black pepper

Equipment Needed

  • Sharp knife
  • Cutting board
  • Measuring cup
  • Measuring spoons
  • 6 quart crock pot

Time Needed

  • Prep Time: 10 minutes
  • Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high (The cooking time depends on how hot or cool your crock pot cooks. You will want to continue cooking until your veggies are fork tender.)

Ingredients

  • 3 lbs red potatoes washed and quartered
  • 16 oz bag baby carrots
  • 1 medium onion sliced
  • 32 oz chicken broth
  • water (approximately 2-3 cups)
  • 1 teaspoon Seasoning Salt
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon Pepper

Instructions

  • Put your potato quarters, carrots and onion slices in the bottom of your 6 quart slow cooker.
  • Sprinkle your seasonings on top and pour your broth in your crock pot.
  • Pour in enough water to barely cover your veggies (about 2-3 cups).
  • Cover and cook on low for 6-8 hours or high for 3-4 hours (until your veggies are fork tender).

    32 oz of broth PLUS 2-3 cups of water. I feel like these will be swimming in liquid. Is this accurate?

      Yes, this is accurate. With 3 lbs of potatoes, 1 lb of baby carrots and an onion, the veggies fill up quite a bit of a 6 quart crock pot. In order for the veggies on top to cook up as quickly as the veggies that are lower, you need all of them to be covered with liquid. I hope you enjoy this recipe as much as we do!
