This Crock Pot Beefy Potato Soup for Two recipe has so many wonderful things about it. It is easy to put together, very filling, has generous servings and wonderful flavor! What more could you ask for? I knew that the flavor was going to be awesome since we love Crock Pot Beefy Potato Soup when I make it. It has beef, bacon and potatoes all in one, so it is pretty easy to understand why it is so yummy.

  • 1 3/4 cups frozen diced potatoes, kept frozen
  • 1/2 lb ground beef, browned and drained
  • 5 pieces bacon, cooked crispy and crumbled
  • 1/4 cup onion diced
  • 1 1/2 cup beef broth
  • 1/4 cup water
  • 2 1/2 teaspoons all purpose flour
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

  • Cooking Time: approximately 1 hour and 20 minutes on low followed by approximately 35 minutes on high or approximately 1 hour and 15 minutes on high

    Ingredients

    • Combine your frozen potatoes, browned ground beef, crumbled bacon, onion, beef broth and water in your 2.5 quart to 4 quart crock pot.
    • Cover and cook on low for 1 hour and 20 minutes or on high for 40 minutes.
    • Mix together your flour, salt, pepper and milk in a small bowl or coffee cup, pour into your crock pot and stir until well combined.
    • Cover and cook on high for 30-35 mins, until your soup has thickened to desired consistency.
    • Sprinkle your cheese on top of your soup and stir until your cheese melted.
