Crock Pot Beefy Potato Soup Recipe
Crock Pot Beefy Potato Soup
Ingredients
- 32 oz frozen diced potatoes
- 1 lb ground beef browned and drained
- 1 lb bacon cooked crisply and crumbled
- 1 small onion diced
- 32 oz beef broth
- 1 cup water
- 3 tablespoons all-purpose flour
- salt and pepper to taste
- 1 cup milk
- 4 cups Cheddar cheese shredded
Instructions
- Combine your frozen potatoes, browned ground beef, crumbled bacon, onion, beef broth and water in your 6-quart crock pot
- Cover and cook on low for 6-7 hours or high for 3 hours
- Mix together your flour, salt, pepper and milk in a bowl and pour into your crock pot
- Cover and cook on high for 20-30 mins, until your soup has thickened to desired consistency
- Sprinkle your cheese on top of your soup and stir until your cheese melted

Could you use fresh diced potatoes?

I haven’t tried this with fresh diced potatoes, but think it could work. It might change the cooking time, so watch it closely the first time you make it. If you give it a try, let me know how it turns out!
