Ever just need some comfort food? Usually when I’m needing comfort food, I don’t want to spend forever on prepping it. When I saw this Crock Pot Easy Cheesy Potato Soup in Gooseberry Patch’s Slow Cooker to the Rescue, I knew I would love it because it is almost exactly like the amazing Crock Pot Cheesy Potato Soup. Of course, I had to make a few adjustments!
Crock Pot Easy Cheesy Potato Soup

Ingredients for Crock Pot Easy Cheesy Potato Soup
- 32 oz frozen diced potatoes
- 1 small onion, diced
- 32-oz container chicken broth
- 1 c water
- 3 T all-purpose flour
- salt and pepper to taste
- 1 c milk
- 4 cups shredded Cheddar cheese
- Garnish: sliced green onions and 1 lb bacon, cooked until crispy and crumbled
How to Make Crock Pot Easy Cheesy Potato Soup

Combine your frozen potatoes, onion, chicken broth and water in your 6-quart crock pot (I used Sir Hamilton, my Hamilton Beach Programmable Insulated Slow Cooker)

Cover and cook on low for 6-7 hours or high for 3 hours

Mix together your flour, salt, pepper and milk in a bowl and pour into your crock pot

Cover and cook on high for 20-30 mins, until your soup has thickened to desired consistency

Sprinkle your cheese on top of your soup and stir until your cheese melted

Serve with your bacon and green onions, if desired

Can you use fresh potatoes?

I haven’t tried this one with fresh potatoes, but think it could work. The cooking time may vary, so watch it closely the first time to adjust as needed. If you give it a try, let me know how it goes!

Omg this was amazing!
We added roasted garlic, because we add garlic to most all savory dishes. This will be added to our year-round rotation.

Any thought on if I can use regular raw chopped potatoes instead? I just happen to have some I need to use lol

I have tried this recipe and it is awesome. I have also added chopped broccoli florets and chopped carrot pieces.
Gave it to some people at work that don’t like “crock-pot” foods/casseroles,etc.or cook with frozen foods and they all wanted the recipe.
