There is just something wonderful about a simple recipe. Not only is this Crock Pot Italian Style Chicken and Potatoes for Two an easy recipe to put together, it is also easy on your budget. This recipe only has three ingredients that can be bought pretty inexpensively. Even with the few ingredients, this meal packs a powerful flavor that is absolutely delicious.
Please note that I say to cut your potato slices thinly. The reason for this is for the cooking time. Potatoes can take a long time to cook in the crock pot if they are thicker pieces. Since two chicken thighs cook up rather quickly in a 2.5-4 quart slow cooker, you will need to make sure your potato slices are thin so they can cook up in the same time frame. By doing this, you will end up with juicy chicken and fork tender potatoes at the same time.

What You Will Need for Crock Pot Italian Style Chicken and Potatoes for Two
Ingredients Needed
- 2 boneless, skinless chicken thighs, trimmed
- 2 medium Russet potatoes, sliced thin
- 3/4 cup Italian dressing
Equipment Needed
- Vegetable peeler
- Sharp knife
- Cutting board
- Measuring cup
- 2.5 quart slow cooker or 4 quart slow cooker
Time Needed
- Prep Time: 10 minutes or less
- Cooking Time: 4 to 5 hours on low or 2 to 2.5 hours on high, turning your insert halfway through cooking if your slow cooker does not cook evenly

Crock Pot Italian Style Chicken and Potatoes for Two
Ingredients
- 2 boneless skinless chicken thighs
- 2 medium Russet Potatoes peeled and sliced thinly
- 3/4 cup Italian dressing
Instructions
- Place your thin potato slices in the bottom of your 2.5 quart or 4-quart crock pot.
- Top with your chicken and Italian dressing.
- Cover and cook on low for 4-5 hours or high for 2-2.5 hours, turning your insert halfway through cooking if your slow cooker does not cook evenly. It is done when your chicken and potatoes are both cooked through.
