How to Make Garlic Chicken Thighs for Two in a Crock Pot

The flavors of this Crock Pot Garlic Chicken Thighs for Two is incredible. There are quite a few ingredients in this recipe, but if you have a stocked spice rack, I am guessing you will have most of these in your home already. All of these common ingredients come together to give you a flavor packed chicken dish that is a huge hit in my home. (Psst…if you need more servings, you can find the original recipe here.)
If you look at the original recipe, you may notice that I changed it from bone-in chicken thighs to boneless. This was just because I already had some boneless chicken thighs. You can still use bone-in thighs, if you prefer, or even use chicken breasts cut into thigh size pieces. As always, we highly recommend watching any recipe closely the first time you make it so you can adjust the cooking time as needed for your specific slow cooker unit and any alterations you have made to the original recipe.
What You Will Need for Crock Pot Garlic Chicken Thighs for Two
Ingredients Needed
- 2 boneless, skinless chicken thighs, trimmed
- 2 tablespoons butter, sliced
- 1/4 cup butter, melted
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon ground red pepper
- 1/4 teaspoon parsley flakes
- 1/2 teaspoon garlic salt
- 1/4 teaspoon dried cilantro leaves
Equipment Needed
- Sharp knife
- Cutting board
- Skillet
- Tongs or flipping spatula
- Small microwave safe mixing bowl
- Whisk
- Stirring spatula
- Measuring spoons
- 2.5 quart slow cooker or 4 quart slow cooker
Time Needed
- Prep Time: approximately 15 minutes
- Cooking Time: 2 to 2.5 hours on low or 1 hour to 1 hour and 15 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly

Crock Pot Garlic Chicken Thighs for Two
Ingredients
- 2 boneless skinless chicken thighs
- 2 tablespoons butter sliced
- 1/4 cup butter melted
- 1 /4 tablespoon garlic powder
- 1/2 teaspoons garlic salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon parsley flakes
- 1/4 teaspoon dried cilantro leaves
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon ground red pepper
Instructions
- Melt 2 tablespoons of butter in a skillet over medium/high heat.
- Brown both of your chicken thighs, about 3 minutes on each side.
- Whisk together your melted butter and spices and immediately pour evenly over your chicken.
- Cover and cook on low 2-2.5 hours or on high 1 hour to 1 hour and 15 minutes, turning your insert halfway through cooking if your slow cooker does not cook evenly.
Notes
- When you are browning your chicken, let it be for the 3 minutes on each side. Don’t bother it at all. It will make the browning process work much better.
