How to Make Poor Man’s Beef Manhattan for Two in a Crock Pot

I knew we would love this Crock Pot Poor Man’s Beef Manhattan for Two because we love the original recipe. (If you need more servings, you can find the original recipe here.) However, I was pleasantly surprised when I saw just how quickly this recipe cooked up with fewer portions. When I convert a recipe to only having two servings, I always watch it very closely since I know the cooking time will be different. I know my 2.5 quart slow cooker cooks hot, but when I checked the recipe at 30 minutes and saw that it was starting to simmer, I was happy I checked it as early as I did. I let it simmer for about 15 minutes more, and then we dug in. It was just as delicious as the original!
What You Will Need for Crock Pot Poor Man’s Beef Manhattan for Two
Ingredients Needed
- 1/2 lb ground beef, cooked and drained
- 1 tablespoon brown gravy mix
- 1/2 cup water
- 1 1/4 cup of mashed potatoes
- 2 slices of white bread
Equipment Needed
- Micro Cooker or skillet and strainer
- Mix n chop
- Measuring spoon
- Measuring cups
- Medium size mixing bowl
- Fork or whisk
- Stirring spatula
- Whatever you need to prepare your favorite mashed potatoes.
- 2.5 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1 hour to 1.5 hours on low or around 45 minutes on high, it is done when your gravy is at a good simmer

Crock Pot Poor Man’s Beef Manhattan for Two
Ingredients
- .5 lbs ground beef browned and drained
- 1 tablespoon Brown Gravy Mix
- 1/2 cup water
- 1 1/2 cups mashed potatoes prepared
- 2 slices white bread
Instructions
- Mix together your brown gravy mix and water.
- Combine your gravy mixture with your ground beef until all your beef is evenly coated.
- Spoon your mashed potatoes evenly across the top of your beef mixture.
- Cook on low for 1-1.5 hours or high for around 45 minutes, it is done when your gravy is at a good simmer.
- Serve potatoes and beef mixture spooned over a piece of bread.
