How to Make Beefy Potato Taco Casserole for Two in a Crock Pot
Aunt Lou here.
I love when a recipe has a side dish made right with the main. Of course, having delicious flavor in that same recipe is a must. This Crock Pot Beefy Potato Taco Casserole for Two checks off both boxes and more! (Psst…if you need more servings of this recipe, you can find the original Crock Pot Beefy Potato Taco Casserole recipe here.)
If you are like my momma, you can use a knife to peel and thinly slice up potatoes like it is nothing. However, if you are like me, who most definitely did not inherit this skill, you can use a vegetable peeler and a mandoline. This is the one I have. I love that the you can adjust the thickness of the slices you are making and the different blades. Make sure you are extremely careful while using it. The blades are incredibly sharp. That makes it great for slicing veggies, but also means you need to be extra cautious while using it.
