If you are like my momma, you can use a knife to peel and thinly slice up potatoes like it is nothing. However, if you are like me, who most definitely did not inherit this skill, you can use a vegetable peeler and a mandoline. This is the one I have. I love that the you can adjust the thickness of the slices you are making and the different blades. Make sure you are extremely careful while using it. The blades are incredibly sharp. That makes it great for slicing veggies, but also means you need to be extra cautious while using it.

What You Will Need for Crock Pot Beefy Potato Taco Casserole for Two

Ingredients Needed

  • 1/2 lb ground beef
  • 1 clove garlic, minced
  • 1 tablespoon taco seasoning
  • 2/3 cup cheddar cheese soup
  • 2 cups potatoes, peeled and sliced thinly (the measurement is of the thin potato slices)
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth

  • Prep Time: 10 minutes
  • Cooking Time: 2 hours and 40 minutes to 3 hours on low or 1 hour and 20 minutes to 1 hour and 30 minutes on high, you will want to stir everything once or twice during cooking
  • Cooling Time: 10 to 15 minutes

    • Brown your ground beef with garlic and drain.
    • Place your potato slices in the bottom of a slightly greased 2.5 quart to 4 quart slow cooker.
    • Spread your ground beef evenly on top of your potatoes.
    • Sprinkle your taco seasoning on top of everything.
    • Spoon your soup evenly on top.
    • Sprinkle your cheese evenly across the top of the everything.
    • Gently pour your beef broth evenly around your crock pot.
    • Cover and cook 2 hours and 40 minutes to 3 hours on low or 1 hour and 20 minutes to 1 hour and 30 minutes on high, you will want to stir everything once or twice during cooking
    • Let it cool for 10-15 minutes before serving.
