How to Make Mississippi Beefy Vegetable Soup in a Crock Pot

Oh my goodness folks! This Crock Pot Mississippi Beefy Vegetable Soup started out as a “huh, I think that might work” idea for a recipe. It ended up as a fabulous recipe that we will be making time and time again around my house! Michael just kept saying over and over, “This is REALLY good!” I agree dear husband, I agree!
If you are new to cooking, don’t let the long list of ingredients fluster you or scare you off. This delicious soup really is a simple recipe. It requires a little bit of prep, but then you just throw it all together and the crock pot does the work!
I used 3 pounds of 80/20 ground beef. I haven’t tried this with an extra lean ground beef, but if you want to do that and use only 2 pounds, I think that could work as well. Or you could use 3 pounds of extra lean ground beef if you want a super duper hearty soup! The choice is yours!
What You Will Need
Ingredients Needed
- 3 lbs ground beef browned and drained
- 1 oz ranch dip mix
- 1 oz brown gravy mix packet
- 1/4 cup butter sliced
- 6 pepperoncinis
- 4 cups Beef Broth
- 6 medium Russet Potatoes peeled and cubed
- 16 oz bag baby carrots sliced
- 29 oz green beans (2 – 14.5 oz cans), drained
Equipment Needed
- Skillet and strainer or micro cooker
- Meat Chopper or wooden spatula
- Vegetable peeler
- Sharp knife
- Cutting board
- Can opener
- Can strainer
- Measuring cup
- Wooden spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high

Crock Pot Mississippi Beefy Vegetable Soup
Ingredients
- 3 lbs ground beef browned and drained
- 1 oz ranch dip mix
- 1 oz brown gravy mix packet
- 1/4 cup butter sliced
- 6 pepperoncinis
- 4 cups Beef Broth
- 6 medium Russet Potatoes peeled and cubed
- 16 oz bag baby carrots sliced
- 29 oz green beans (2 – 14.5 oz cans), drained
Instructions
- Combine all your ingredients in a 6 quart slow cooker, stir well and make sure your vegetables are covered by your broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, stirring occasionally. (It is done when the vegetables reach desired tenderness.)
