How to Make Buffalo Chicken Soup for Two in a Crock Pot

The original Crock Pot Buffalo Chicken Soup is a family favorite around here. So, I thought I would make this recipe in a “for two” version so people who need fewer servings could give it a try!
When I was creating this recipe, I did alter the amount of chicken a bit. So, this soup has a little more chicken per serving than the original, but we really liked it both the original way and this way. For the half of a pound of chicken, you can either use leftover chicken, rotisserie chicken or cook chicken just for this recipe, whatever works best for you.

What You Will Need for Crock Pot Buffalo Chicken Soup for Two
Ingredients Needed
- 1/2 pound boneless, skinless chicken, cooked and shredded
- 10.5 oz can cream of chicken soup
- 2 cups milk
- 1/3 cup sour cream
- 4 teaspoons hot pepper sauce (I use Frank’s hot sauce in mine, but you can use your favorite hot pepper sauce.)
- Optional garnish: Shredded Monterey Jack cheese, chopped green onions, more hot pepper sauce
Equipment Needed
- Small pot (You will need this if you are cooking your chicken and not using leftover chicken or chicken from rotisserie chicken.)
- Two forks
- Can opener
- Spoon
- Measuring cups
- Measuring spoon
- Stirring spatula
- Sharp knife
- Cutting board
- 2.5 quart slow cooker to 4 quart slow cooker
Time Needed
- Prep Time: 5 to 10 minutes (if you are using chicken that has already been cooked) or 25 to 35 minutes (if you are cooking your chicken at the time you are putting the recipe together)
- Cooking Time: 2 hours on low or 1 hour on high, stirring halfway through cooking time

Crock Pot Buffalo Chicken Soup for Two
Ingredients
- 2 cups milk

Instructions
- Mix together all of your ingredients except for you toppings in your 2.5 quart, 3 quart or 4 quart crock pot.
- Cover and cook on low for around 2 hours or on high for 1 hour, stirring halfway through cooking.
- Serve it up with some shredded Monterey Jack, chopped green onions and a splash of hot pepper sauce, if desired.
