If you love a good dump and go recipe, you will definitely want to check out this 3 Ingredient Crock Pot Buffalo Chicken for Two. It is low carb on its own. However, it is delicious even if you do not eat a low carb diet. This shredded chicken is great over rice, riced cauliflower, on a bun, over a salad or on a taco or burrito shell. What You Will Need for Low Carb 3 Ingredient Crock Pot Buffalo Chicken for Two
Ingredients Needed
- 3/4 lb boneless, skinless chicken (I used 4 very small chicken thigh that were trimmed.)
- 1 tablespoon ranch dip mix
- 1/2 cup buffalo wing sauce (I used Frank’s Red Hot Sauce, but you can use your favorite buffalo wing sauce.)
Equipment Needed
- Sharp knife and cutting board (Optional: You will need these if you want to trim your chicken.)
- Measuring spoon
- Measuring cup
- Small mixing bowl
- Small whisk
- 2.5 quart crock pot to 4 quart crock pot
- Two forks
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 1 hour and 40 minutes to 2 hours on low or 50 to 60 minutes on high, turning your insert halfway through cooking if your slow cooker does not cook evenly
- Additional Time: 5 minutes to shred your chicken with two forks
