However, it is delicious even if you do not eat a low carb diet. This shredded chicken is great over rice, riced cauliflower, on a bun, over a salad or on a taco or burrito shell. What You Will Need for Low Carb 3 Ingredient Crock Pot Buffalo Chicken for Two

Ingredients Needed

  • 3/4 lb boneless, skinless chicken (I used 4 very small chicken thigh that were trimmed.)
  • 1 tablespoon ranch dip mix
  • 1/2 cup buffalo wing sauce (I used Frank’s Red Hot Sauce, but you can use your favorite buffalo wing sauce.)

Equipment Needed

  • Sharp knife and cutting board (Optional: You will need these if you want to trim your chicken.)
  • Measuring spoon
  • Measuring cup
  • Small mixing bowl
  • Small whisk
  • 2.5 quart crock pot to 4 quart crock pot
  • Two forks

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 1 hour and 40 minutes to 2 hours on low or 50 to 60 minutes on high, turning your insert halfway through cooking if your slow cooker does not cook evenly
  • Additional Time: 5 minutes to shred your chicken with two forks
