Well folks, Momma has been at it again! She came up with the idea for this Cheesy Crock Pot Fiesta Potato Soup recipe. You see, we were at camp one weekend, and she made our Crock Pot Creamy Sausage Cheese Dip and had some leftovers at the end of the weekend. She took the leftover dip and added in some boiled potatoes. She said it was delicious. So, I knew I was going to have to give this a try in my crock pot. The results were wonderful!

This Cheesy Crock Pot Fiesta Potato Soup is such a hearty and delicious soup. It takes our favorite sausage cheese dip and makes a potato soup! Yummy!

What You Will Need for Cheesy Crock Pot Fiesta Potato Soup

Ingredients Needed

  • 6 medium russet potatoes, peeled and cut into large cubes
  • 1/4 teaspoon salt
  • 1 tablespoon dried minced onions
  • Water (enough to cover your potatoes)
  • 16 oz Velveeta, cut into small cubes (Half of a 32 oz block.)
  • 1 lb ground sausage, browned and drained
  • 1 cup salsa
  • 2 oz cream cheese, softened
  • 1 to 1 1/2 cups of milk (If you want your soup thicker, use 1 cup, but if you want to have it thinner, use 1 1/2 cups.)

Equipment Needed

Time Needed

  • Prep Time: 10 to 15 minutes
  • Cooking Time: 3 to 4 hours on low or 1.5 to 2 hours on high (until your potatoes are fork tender), plus an additional 20 to 30 minutes on high, stirring occasionally during the last 20 to 30 minutes

Ingredients

  • 6 medium Russet Potatoes peeled and cut into large cubes
  • 1/4 teaspoon salt
  • 1 tablespoon Dried Minced Onion
  • Water (Enough to cover your potato cubes.)
  • 16 oz Velveeta cut into small cubes
  • 1 lb ground sausage browned and drained
  • 1 cup Salsa
  • 2 oz cream cheese softened and cut into small cubes
  • 1 cup milk (If you do not want a thick soup, use 1 1/2 cups of milk.)

Instructions

  • Put your potato cubes, salt and dried minced onion in a 6 quart crock pot and cover your potatoes with water.
  • Cover and cook on low for 3-4 hours or high for 1.5-2 hours.
  • Once your potatoes are fork tender, drain your potatoes and return to your crock pot.
  • Add remaining ingredients, stir well, cover and cook on high for an additional 20-30 minutes, stirring every 5-7 minutes, until all the ingredients have melded together. (If you want your soup to be thinner, once your ingredients have melted and blended together, add 1/4 cup of milk at a time and stir until desired consistency is reached.)
