How to Make Hearty Potato Soup in a Crock Pot

Whether Fall has arrived (as it has now) with its brisk breezes and cool nights or you want a delicious soup to fill you up while not heating up your kitchen in the summer or spring, this Hearty Crock Pot Potato Soup is definitely for you!
So, from a Former Fall Hater, soups like this one are a big part of the reason I am now a full blown Fall Lover! I love the soups, hoodie and toboggan (what us Southern Hoosiers call a knit/crocheted winter hat) weather and sitting around a campfire to keep warm. This soup really does have it all. There are so many delicious ingredients that come together to give you a filling and flavorful soup that is sure to be a family favorite winter, spring, summer or fall (any James Taylor fans out there?).
By the way, if you are wondering about the cooling time I added to this recipe, it is to save your tongue. You see, we dug right into this delicious soup and all ended up with burnt tongues. It is one of those, we burn our tongues so you don’t have to kind of times. 😉
What You Will Need
Ingredients Needed
- 1 lb lean ground beef, cooked and drained
- 6 cups potatoes peeled and cubed
- 1/2 cup onion diced
- 32 oz container chicken broth
- 1 cup water
- 3 Tablespoons all-purpose flour
- salt and pepper to taste
- 1 cup milk
- 3 cups shredded Cheddar cheese
- Garnish: sliced green onions and 1 lb bacon cooked until crispy and crumbled
Equipment Needed
- Skillet and strainer or Micro Cooker (for ground beef)
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoons
- Skillet, griddle or air fryer (for bacon)
- Wood spoon
- 6 quart slow cooker
Time Needed
- Prep Time: 20 minutes
- Cooking Time: 10-12 hours
- Cooling Time: 30 minutes

All Day Hearty Crock Pot Potato Soup
Ingredients
- 1 lb lean ground beef
- 6 cups potatoes peeled and cubed
- 1/2 cup onion diced
- 32 oz container chicken broth
- 1 cup water
- 3 Tablespoons all-purpose flour
- salt and pepper to taste
- 1 cup milk
- 3 cups Shredded Cheddar Cheese
- Garnish: sliced green onions and 1 lb bacon cooked until crispy and crumbled
Instructions
- Peel and cut your potatoes into cubes
- Dice about a half of a small onion until you have 1/2 cup
- Put ground beef, potatoes and onion in your crock pot
- Add your chicken broth and water to your crock pot
- Cover and cook on low for 10-12 hours
- About 30 minutes before your soup is done, mix together your flour, salt, pepper and milk.
- Pour mixture into your crock pot and turn the heat to high for the remaining 30 minutes
- When the soup has thickened, add your cheese and stir together until the cheese melts
- Garnish with bacon and green onions
