How to Make Parmesan Chicken and Potatoes in a Crock Pot

We absolutely loved the Crock Pot Parmesan Scalloped Potatoes I made a while back. So, I got to thinking….”What if I added chicken?!” Boy oh boy was that a good idea! You are going to absolutely love this Parmesan Crock Pot Chicken and Potatoes recipe! It is amazing!
This really is an easy recipe. With just a little bit of prep (peeling and slicing potatoes and cutting up chicken), you can have a delicious main and one of your sides done! Pair it with a green salad, and you will have one incredible meal!
Technically, you can skip the cooling step. It will all taste just as good, but your sauce will be thinner than I wanted it to be. So, if you are pressed for time, not worries. It will just be super yummy! However, if you have the time, I highly recommend letting it cool! I love the thickened sauce and bet you will too!
What You Will Need
Ingredients Needed
- 1.25 lbs boneless, skinless chicken, cubed
- 4 Russet potatoes thinly sliced
- 3 cups whipping cream
- 1/4 cup fresh parsley chopped
- 2 cloves garlic minced
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 cups fresh grated Parmesan cheese
Equipment Needed
- Sharp knife
- Cutting board
- Medium to large bowl
- Measuring cup
- Measuring spoons
- Garlic press
- Cheese grater
- Spoon
- Casserole Crock Pot or 6 quart Crock Pot
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high
- Cooling Time: 30 minutes

Parmesan Crock Pot Chicken and Potatoes
Ingredients
- 1.25 lbs boneless skinless chicken cubed
- 2 lbs Russet potatoes thinly sliced
- 3 cups whipping cream
- 1/4 cup fresh parsley chopped
- 2 cloves garlic minced
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup fresh grated Parmesan cheese
Instructions
- Layer your thinly sliced potatoes in the bottom of your lightly greased casserole crock or 6-quart crock pot.
- Top with your chicken cubes
- Mix together you remaining ingredients, except for your parmesan, and pour over your potatoes.
- Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, it is done when your potatoes are tender and your chicken reaches safe internal temperature.
- Sprinkle your parmesan on top and stir in to melt it
- Remove your insert and place on a cooling rack for 30 minutes to let the sauce thicken up, stirring occasionally

Just pulled this out of the oven. (Didn’t have time for the crockpot) SO good. It’s sitting now and you’re right, it’s thickening nicely. I tasted the sauce….YUM! This is definitely going in the recipe file.
