I have been so excited to share this recipe because it makes one of my very favorite low carb soups super simple to throw together, it uses one dish for the entire recipe AND it highlights why I absolutely LOVE my Ninja Foodi for recipes like this!
Air Fry and Pressure Cook in the Same Pot!
My favorite part of using this method is it takes a multiple step crock pot recipe and simplifies it a bit. Using this method you mix the meatballs in the pot, air fry them in the bottom of the pot, add the soup ingredients and pressure cook in the same pot!
Making the Recipe without a Ninja Foodi
What if you don’t have a Ninja Foodi? If you do not have a Ninja Foodi, you can make the meatballs in any air fryer or your oven at home and then pressure cook in your instant pot OR make the soup on your stove top until the veggies are tender.
Notes on Low Carb Ninja Foodi Italian Wedding Soup
- This is an air fryer/electric pressure cooker version of our Low Carb Crock Pot Italian Wedding Soup Recipe.
- We use our Ninja Foodi for this entire recipe with just the main pot and two lids. We do not use the air crisp basket for this recipe. (See video).
- If you do not have a Ninja Foodi, you can make the meatballs in any air fryer or your oven at home (use same time and temp as starting point) and then pressure cook in your instant pot OR make the soup on your stove top until the veggies are tender.

Low Carb Ninja Foodi Italian Wedding Soup
Ingredients
Meatball Ingredients
- 1 lb ground sausage
- 1/4 cup Shredded Parmesan
- 1/2 cup pork rinds crush
- 1/4 cup heavy cream
- 1 egg beaten
- 1/2 tbsp Italian Seasoning
- salt and pepper to taste
Soup Ingredients
- 6 cups Chicken Broth
- 1 tablespoon minced garlic
- 1 tablespoon italian seasoning
- 1 carrot chopped
- 3 green onions chopped
- 3 ribs celery chopped
- 10 oz frozen riced cauliflower
- 3 oz baby spinach
- garnish: shredded parmesan
Instructions
- Mix meatballs ingredients inside the pot.
- Divide into 12 meatballs and spread out across the bottom of your pot.
- Air Crisp (in the pot not the basket) at 350 for 13 minutes
- Pour broth over top of the meatballs and gently stir.
- Add all remaining ingredients except spinach and garnish.
- Cook under high pressure for 15 minutes and quick release.
- Stir in spinach and serve in bowls topped with shredded Parmesan.
