Cris here.

You guys. This soup. This soup is my new favorite low carb soup. The whole family absolutely LOVES it! We use our Low Carb Air Fryer Meatballs in it and it is incredible! Even if you do not have an air fryer, you can use our meatball mix and make them in the oven (350 until cooked through) or in a skillet.

Notes on Low Carb Crock Pot Italian Wedding Soup

  • We use our Low Carb Air Fryer Meatballs to make this soup low carb. If you do not have an air fryer, you can still use this recipe and make the meatballs in a skillet (or browning slow cooker) until they are cooked through.
  • We use our 6 quart multicooker to make this recipe, but you can use any 6 quart slow cooker.
  • All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed.
  • Looking for more recipes? Our Recipe Finder can help you find exactly what you need.

  • As with any of our recipes, carb counts, calorie counts and nutritional information varies greatly. As a result, your nutritional content depends on which products you choose to use when cooking this dish. The auto-calculation is just an automated estimate and should NOT be used for specific dietary needs.

What Other Home Cooks are Saying:

“I made this tonight with orzo and premade meatballs because itโ€™s what I had. Delicious and extremely easy!”

Christina B.

“Hands down the best soup ever made in a crock pot. I made the air fryer meatballs, but half the size and that was the only change I made. Holy Toledo. This is a total keeper, and surprising filling! Thanks Cris!!”

  1. Just printed off the recipe to try and have a question? Does the cauliflower rice not turn
into mush or disintegrate after cooking? Wondering if I could add just a small bit of orzo and the cauliflower to give the illusion of more orzo?

    1. 5 stars
It doesn’t turn to mush, however, if you want it firm, you could always stir it in at the end. If you aren’t low carb, you can use orzo instead. Enjoy!
