How to Make Low Carb Italian Wedding Soup in a Slow Cooker

You guys. This soup. This soup is my new favorite low carb soup. The whole family absolutely LOVES it! We use our Low Carb Air Fryer Meatballs in it and it is incredible! Even if you do not have an air fryer, you can use our meatball mix and make them in the oven (350 until cooked through) or in a skillet.

- We use our Low Carb Air Fryer Meatballs to make this soup low carb. If you do not have an air fryer, you can still use this recipe and make the meatballs in a skillet (or browning slow cooker) until they are cooked through.
- We use our 6 quart multicooker to make this recipe, but you can use any 6 quart slow cooker.
- All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed.

Low Carb Crock Pot Italian Wedding Soup
Ingredients
- 1 lb Cooked Low Carb Meatballs We used our Air Fryer Low Carb Meatballs (see below)
- 6 cups Chicken Broth
- 1 tablespoon minced garlic
- 1 tablespoon italian seasoning
- 1 carrot chopped
- 3 green onions chopped
- 3 ribs celery chopped
- 10 oz frozen riced cauliflower
- 3 oz baby spinach
- garnish: shredded parmesan
Instructions
- Place cooked meatballs in a 6 quart slow cooker.
- Pour broth over top of the meatballs and add all remaining ingredients except spinach and garnish.
- Cook on high for 2-3 hours or low for 4-6 hours.
- Stir in spinach and serve in bowls topped with shredded Parmesan.

Low Carb Air Fryer Meatballs
Ingredients
- 1 lb ground sausage
- 1/4 cup shredded parmesan
- 1/2 cup pork rinds crushed
- 1/4 cup heavy cream
- 1 egg beaten
- 1/2 tablespoon Italian seasoning
- salt and pepper to taste
Instructions
- Place all ingredients in a mixing bowl and blend well.
- Form mixture into 12 uniform balls.
- Place meatballs in a single layer in air fryer basket.
- Air Fry (or Air Crisp) at 350 for 11-12 minutes until cooked through.
- Allow meatballs to rest for 3 minutes before removing from air fryer.

Just printed off the recipe to try and have a question? Does the cauliflower rice not turn
into mush or disintegrate after cooking? Wondering if I could add just a small bit of orzo and the cauliflower to give the illusion of more orzo?

It doesn’t turn to mush, however, if you want it firm, you could always stir it in at the end. If you aren’t low carb, you can use orzo instead. Enjoy!
