How to Make Low Carb Meatballs in an Air Fryer

We love meatballs around here and have enjoyed our low carb beef based meatballs for years but we needed a sausage based meatball for a soup we wanted to make, so we created these meatballs and boy are they good!
Notes on Low Carb Air Fryer Meatballs
- Pork Rinds might sound like a weird ingredient, but trust us, they are just perfect for this recipe!
- We have tested this recipe in the Ninja Foodi, and using the Mealthy CrispLid you can use on an Instant Pot.
- If you don’t have an air fryer, you can use this recipe to make your meatballs in the oven (cook at 350 until cooked through) or skillet.
- All air fryers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own unit and time adjusted as needed.

Low Carb Air Fryer Meatballs Recipe
Low Carb Air Fryer Meatballs
Ingredients
- 1 lb ground sausage
- 1/4 cup shredded parmesan
- 1/2 cup pork rinds crushed
- 1/4 cup heavy cream
- 1 egg beaten
- 1/2 tablespoon Italian seasoning
- salt and pepper to taste
Instructions
- Place all ingredients in a mixing bowl and blend well.
- Form mixture into 12 uniform balls.
- Place meatballs in a single layer in air fryer basket.
- Air Fry (or Air Crisp) at 350 for 11-12 minutes until cooked through.
- Allow meatballs to rest for 3 minutes before removing from air fryer.

OMG this is so good. Having a very hard time keeping my hands off them till dinner.
I did change one thing. Didn’t have any heavy whipping cream, so I used plain Greek yogurt.
