When I saw this Crock Pot Italian Meatball Soup in Gooseberry Patch’s Slow Cooker Recipes, I knew we were going to make it immediately. I also knew it would be the perfect soup to throw in our Lunch Crock Food Warmer  to send with the hubs to work.

Mikey loved this recipe so much, he made a video about it!

Ya see, Mikey oftentimes gets to working at work and won’t take a break to eat lunch. So, oftentimes, he won’t even take a lunch or if he does, it oftentimes comes back untouched… (not exactly a vote of confidence for this food blogger’s cookin’, huh ๐Ÿ˜‰ ). The Lunch Crock Food Warmer  fixes that problem for us (and no, they are not a sponsor for this post). He can plug in leftovers at work and keep them warm throughout his shift, stopping for a bite or two here and there when his workload allows him to… he LOVES this thing, and the stuff I have been filling it with!

Note: The Lunch Crock Food Warmer  is not a traditional slow cooker. It is meant to warm food, not cook it. I have tested it along side my other slow cookers and it does indeed warm at a much lower setting than a traditional crock pot and is not meant for raw meats. We will be sharing over the next year recipes that we enjoy using with this crock for those that are interested in it.

Crock Pot Italian Meatball Soup Notes

  • I made this soup in my favorite 6 qt slow cooker and it filled it right up, so make sure to use a larger crock when making this soup.
  • I served up the soup for Miss Add and I in regular bowls but I packed away some leftovers in the Crock Pot Lunch Warmer for Mikey to take to work that week and he LOVED both the soup and warmer to keep his soup nice and warm all day for him.
  • I doubled up on the meatballs in this recipe because we love meatballs… It did leave us with quite a few meatballs at the end of the soup, which no one complained about ;). When adding the meatballs for your family, you may want to vary how many meatballs you add depending on your preference.

Ingredients

  • 32 oz Italian-style meatballs depending on preference (2-16 oz pkgs)
  • 4 cups beef broth
  • 29 oz diced tomatoes with Italian herbs (2-14.5 oz cans)
  • 4 medium potatoes chopped
  • 1 small onion chopped
  • 3 cloves garlic minced (I used 1 teaspoon freeze dried garlic)
  • 16 oz pkg mixed vegetables

Instructions

  • Put your meatballs (still frozen) and all of your broth, seasoning and veggies in your crock pot
  • Cover and cook on low for 6-8 hours

  1. Hi. Instead of potatoes, I would like to use gnocchi or tortellini. When would I add the pasta and do I add more liquid?

      I haven’t tried this recipe with gnocchi or tortellini, but I think they both sound really good! If I were to try it with the gnocchi, I would turn my crock pot on high at the end, stir in the gnocchi and cook for around 15 minutes (checking them often). For the tortellini, I would keep them frozen and add them for the last 2-3 hours, stirring at least once. Without testing it first, I can’t say for sure on the timings, but this would be where I would start. If you give it a try, let me know how it goes. I think I will be giving it a try soon. Thanks for the idea!

  2. Just watched the video and your husband “”ROCKS”. I’m a locomotive engineer and conductor for a small shortline railroad in Texas and I loved the idea of the Crockpot warmer. Many thanks and especially love seeing and hearing about the critters, as I run and operate a small sanctuary and rescue for abused and neglected dogs/cats when i get off the rail. Thanks again!!!!

    2. Melanie!!! My sister from another mister! I’m a dispatcher for a Class 1 railroad up here in Indy! That little warmer keeps me from heading to the candy machine any time I may get 5 seconds to leave my desk. As for the critters, that little Yorkie of ours is top dog in our house. He may not look very intimidatin’, but he has a ferocious lick! Props to you for takin’ care of God’s creatures. Stay safe on the rails!!!

    1. Hi Patrick! I haven’t tried freezing it, but I would be a little concerned about the quality because you are taking pre-cooked frozen meatballs and cooking them then freezing them again and then cooking them again.. If you feel like it would be too much food for your family you might keep a freezer bag beside you as you cook and fill it with half of your uncooked ingredients as you are making the other half so you could freeze one half before the cooking step. Then when you are ready to cook the other half, just dump the bag in and could. All your ingredients should do okay with that process except for maybe the potatoes. Some folks have had frozen uncooked potatoes turn a grey color on them. If that would bother you, you could either leave them out entirely or put them in fresh with your frozen packet. Hope that helps!
