As ya’ll know, I’m the Potato Queen around here. And if you haven’t seen some of my recipes with fresh Parmesan in them yet, just look around! You’ll see that I love fresh Parmesan as much as I love potatoes! So, of course, when I saw a recipe in Gooseberry Patch’s 303 ‘Round the Clock Recipes that had both, you know I had to adapt it to become these yummy Crock Pot Parmesan Scalloped Potatoes! You’re gonna love ’em!

This Crock Pot Parmesan Scalloped Potatoes recipe takes your normal scalloped potatoes to the next level with some yummy Parmesan!

How to Make Parmesan Scalloped Potatoes in a Crock Pot

Layer your thinly sliced potatoes in the bottom of your lightly greased casserole crock or 6-quart crock pot. Mix together you remaining ingredients, except for your parmesan, and pour over your potatoes. Cover and cook on low for 5 1/2 to 6 1/2 hours or on high for 2 1/2 to 3 1/2 hours, it is done when your potatoes are tender. Sprinkle your parmesan on top and cook for an additional 30 minutes.

  • When I first made this, I didn’t stir up the parmesan that was on top of the potatoes. Next time, I may stir them up as the cheese melts so the parmesan is all throughout. Either way, these potatoes are awesome!

Ingredients

  • 2 lbs Russet potatoes thinly sliced
  • 3 cups whipping cream
  • 1/4 cup fresh parsley chopped
  • 2 cloves garlic minced
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup fresh grated Parmesan cheese

    This turned out very nicely, but I added a cup of mild Cheddar when I made it. My husband said it was still “sort of bland,” so next time I’ll use sharp Cheddar and add a bit more pepper. Otherwise great! Thank you!

    P.S. I had seen a different recipe that said allow the cream to come to room temperature before it’s used so I made sure to do that. Helps prevent separating.
