I love potato soup. Considering this is the third different potato soup I have posted for you guys to enjoy (If you haven’t tried out the Crock Pot Cheesy Potato Soup and Crock Pot Potato Bacon Soup yet, you really should put them on your “must make” list!), I am guessing you might have known that. 😉
When I saw this recipe in Gooseberry Patch’s 303 Simple and Satisfying Recipes, I couldn’t wait to try it. You know I can’t just leave a recipe alone though, so I made a few tweaks here and there and added sausage to make it a super hearty soup that has it all!
Ingredients for Crock Pot Sausage Potato Soup
- 1 lb mild ground sausage, browned and drained
- 6 potatoes, peeled and cubed
- 1 onion, chopped
- 1 carrot, sliced, OR 6 baby carrots
- 1 stalk celery, sliced
- 5 cubes chicken bouillon
- 1 tablespoon dried parsley
- 5 cups water
- 1/4 teaspoon pepper
- 1 tablespoon salt
- 6 tablespoons butter melted
- 12 oz can evaporated milk
- Optional topping: shredded cheddar cheese
How to Make Sausage Potato Soup in a Crock Pot

Put everything in your crock pot EXCEPT your milk and cheese

Gently mix it up

Cover and cook on low for 10-12 hours or high for 3-4 hours

When you have an hour left, stir in your milk

Serve with cheese sprinkled on top, if desired
Crock Pot Sausage Potato Soup Notes:
- This is one of those fun recipes that you can easily cater to your family’s wants and needs. If you guys devour carrots, add some more! If you are big onion fans, use some more! If you don’t need quite so many servings, cut the recipe down. You get the idea! I love when a recipe is so easy to adapt to what my family needs!
- The original recipe called for a carrot, but I had baby carrots on hand, so that is what I used. With all the veggies in this recipe, it is a great way to get your family to happily eat their veggies!
- For this Crock Pot Sausage Potato Soup, I used good ol’ Sir Hamilton (my Hamilton Beach Programmable Insulated Slow Cooker). If you don’t have your own Sir Hamilton (click through that link and go get you one…he is my favorite!), then you can use a 5-6 quart slow cooker.
- As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
- All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

I used breakfast sausage in mine. It was delicious! Every year, Cris and Mikey always buy Michael sausage from a local farm for Christmas. It is AMAZING! So we love using it in recipes like this! Enjoy!

If I were to double the recipe, would that make a difference in the time needed to cook on low or high?

I am not sure double this recipe would fit in a 6-quart crock pot very well, so I would recommend using an 8-quart or larger crock pot OR using two 5-6 quart crock pots if you have them.
In an 8-quart or larger crock pot, the cooking times should be similar. However, if you need to make this in ONE 6-quart crock pot on high, I would add a couple hours to the cooking time in order to give all 12 of your potatoes time to cook up nicely (since the low setting cooking time is already up to 10-12 hours, I think that should be enough even if doubled).
As always, watch this recipe closely the first time you make it so that you know the timing that works with your specific slow cooker.
