How to Make Cheesy Chicken Potato Soup in a Slow Cooker

I took a Bob Ross attitude with this recipe, ““We don’t make mistakes, just happy little accidents.” You see, this Crock Pot Cheesy Chicken Potato Soup recipe started as something else and became this delicious soup!
If you want this soup to be a thicker consistency, you can cut the chicken broth down to 1/4 cup. Either way, this soup is delicious! We had it for Michael’s birthday dinner this year. It was treat for all of us! This soup has an amazing cheese sauce that you cook your potatoes and chicken in. We were absolutely in love with it!
This soup can easily be doubled to feed more people if you have a large family, or if you are taking this to a potluck (or pitch-in as us Southern Hoosiers call it). So, keep the servings down with the recipe the way it is or double it up and feed a crowd! Whatever you need!
While most people think of soups for cooler weather, making a delicious soup in your crock pot is also great in Spring and Summer! You have a wonderful meal ready with your slow cooker doing all the work for you while not heating up your kitchen!

Crock Pot Cheesy Chicken Potato Soup
Ingredients
- 5 medium potatoes peeled and sliced thin
- 10.5 oz can Cheddar cheese soup
- 10.5 oz can cream of chicken soup
- 1 cup chicken broth use 1/4 cup broth if you want a thicker soup
- 2 lbs boneless skinless chicken cubed
- 1/2 cup milk
- 1/4 cup butter sliced
- 1/2 cup onion chopped
- salt and pepper to taste
- 1 cup shredded Cheddar cheese plus extra for garnish, if desired
Instructions
- Spray your 4-quart crock pot with cooking spray.
- In a large bowl, mix together your soups, broth, onion and milk until well combined.
- Slowly add in your chicken and potatoes, stirring until everything is coated.
- Sprinkle with salt and pepper and stir.
- Pour your mixture into your crock pot.
- Place butter pats evenly around the soup mixture.
- Sprinkle Cheddar cheese all over the top.
- Cover and cook on low for 4-5 hours.
- Sprinkle each serving with extra shredded cheddar, if desired.

What step is the butter added? I omitted the butter because after re reading it several times to make sure I didn’t miss it, I see nowhere where the butter is added.

Aunt Lou, in step 2 in the directions card, you say to add the milk twice – it’s the first ingredient listed in step 2 and then also its the last ingredient. But in the ingredients list, milk is only listed once and it doesn’t call for the milk to be divided. Can you please clarify – is milk only added once (thus being mentioned twice in step 2) just an ‘oops’ or is the half cup of milk divided in half & added both as the first ‘and’ last ingredient? This soup sounds just what I’m looking for and I don’t want to mess it up. Thank you!
